Quick and Easy Chicken Noodle Soup

Reviewed: Mar. 11, 2012
I made this with whole wheat egg noodles, and I added half a 15 oz. can of pumpkin for body. Really great recipe and so many ways to modify it!

Hash Brown Casserole II

Reviewed: Mar. 7, 2012
I made this with 6T of butter instead of a 1/2C (mainly because it was there and I didn't figure it'd make a difference). I also left off the cornflakes because I don't have any. I noticed after the casserole was done that I was supposed to cover it; I baked it uncovered. I also did a full hour as other reviewers suggested. This is AMAZING! I'm taking this one to a potluck, but I'm going to make another one with browned pork breakfast sausage and maybe some spinach for breakfast one morning.

Butterscotch Oatmeal

Reviewed: Mar. 4, 2012
This is very good. I cut the brown sugar back to 1/4C and I may reduce it even more. I'm used to my oatmeal with just a drizzle of agave though, so I'm still giving this 5 stars due to it just being a matter of different tastes. So, if you like sweet oatmeal, go with what the recipe says. If you like not so sweet, cut it back some.

Enchiladas Suizas

Reviewed: Feb. 7, 2012
This is my favorite enchiladas recipe. I never fry the tortillas though, and one time all I had was heavy whipping cream. The heavy whipping cream was amazing in this dish and I now make it that way.

Ham Bone Soup

Reviewed: Jan. 2, 2012
I didn't have a ham bone, but I have tons of leftover ham. So, I threw in a huge chunk (had to be at least 1 lb). I used black beans because I like them better and was out of kidney beans anyway. My 7yo said this soup is amazing...keeper!

Delicious Ham and Potato Soup

Reviewed: Jan. 1, 2012
This soup is so amazing. I made it as stated other than guesstimating on the amounts. We nearly ate the whole pot. I think I'll be making more tomorrow! Goes great with french bread heated at 400 degrees F til crispy and buttered.

Outrageous Chocolate Chip Cookies

Reviewed: Dec. 9, 2011
I made these exactly as the recipe says, and I baked them for 12 minutes. They're PERFECT. They're crispy on the outside and soft on the inside. My son asked if I could make these every time from now on LOL! I'm at more than 6000 ft elevation, so for anyone doing high elevation baking, these turn out great!

Whole Wheat Pumpkin-Applesauce Muffins

Reviewed: Nov. 30, 2011
I followed other reviewers' suggestions to omit the white sugar and oil. I used 1 cup of pumpkin instead of 1/2 cup. They're really good even just a few minutes out of the oven. I can't wait to taste them tomorrow morning! I may try more pumpkin pie spice next time just because I like a really strong spice flavor in pumpkin breads.

YES!!! THIS is a brownie recipe. Only thing I changed was I used 1 1/2 C white sugar and 1 1/2 C brown sugar.

Simple Maple Syrup

Reviewed: Jul. 25, 2011
This recipe is almost exactly the same as the one that's been in my family for generations. I suppose I'm used to it, but I like it runny. That's the way it always was when I was growing up. The only thing different in my recipe is the addition of 1/4 teaspoon of almond extract. Try it. It really adds something to the syrup.

Absolute Best Pancake Syrup

Reviewed: Jul. 25, 2011
This is pretty good. I wouldn't say it's the best. I didn't have corn syrup, so I omitted it from the recipe. I don't think it's needs it anyway as the syrup is really sweet without it, and the syrup thickens as it sits. My husband and I thought it tasted like candy.

Chocolate Malted Ice Cream

Reviewed: Jun. 26, 2011
I doubled the chocolate malted milk powder and crushed malted milk balls. I also used half and half in place of the milk. This ice cream is so incredibly creamy! Next time I will halve the amount of sugar since I doubled the malt powder and malted milk balls.

Easy Mint Chocolate Chip Ice Cream

Reviewed: Jun. 20, 2011
This ice cream tastes just like Breyer's which is my favorite mint chocolate chip ice cream. I used whole milk because that's what I had on hand. I also left out the food coloring because I have never been a fan of green mint choc chip ice cream anyway. Next time I'm going to try half and half in place of the milk to see if it's a little creamier (it has a bit of an ice milk mouth-feel), but I have no complaints about the first batch I made.

Sweet Restaurant Slaw

Reviewed: Jun. 12, 2011
I made this with a 12 oz. bag of broccoli slaw, used mayo instead of Miracle Whip (because I don't have any), omitted the onion because I was lazy, and omitted the poppy seeds because I don't have any. I also only used 1/3 C sugar. This is a REALLY good cole slaw recipe!

Honey Cornbread

Reviewed: Jun. 6, 2011
I made this recipe for a barbecue I had recently and it came out perfectly sweet, crumbly, and moist. This will be my standard cornbread from now on. It is so good it made my mom want to slap herself! I made a few small changes, substituting ¾ cup milk ¼ cup butter for the heavy cream, and used a preheated cast iron skillet in lieu of the 9x9 baking pan.

Clone of a Cinnabon

Reviewed: Jun. 5, 2011
These are better than Cinnabon. Double the brown sugar, cinnamon, and butter that you spread on the dough, and double the icing, for really gooey cinnamon rolls. DO NOT mix the brown sugar, cinnamon and butter together and then spread on the dough as someone suggested. I tried this, and the brown sugar didn't caramelize; the caramelizing of the brown sugar is what makes them gooey. Spread the butter and then sprinkle the brown sugar and cinnamon mixture over it as the recipe says to. Also, as another reviewer stated, flipping the rolls over after you take them out of the oven is another key to gooey cinnamon rolls.

Hasty Chocolate Pudding

Reviewed: Jun. 5, 2011
I made this according to the recipe, other than adding 2 tablespoons of butter (per other reviewers' suggestions) when I added the vanilla. This pudding is so incredibly good. I tried it cold and didn't care for it. When it's hot though, it's the best chocolate pudding I've ever tasted.

Old Fashioned Potato Salad

I omitted the celery salt because I never have it on hand. I also added another heaping tablespoon of mayo. This is the best potato salad recipe I have ever tasted. My mother-in-law and my husband agreed!

Tuna Noodle Casserole from Scratch

Reviewed: Apr. 27, 2011
Love a recipe that's truly from scratch and isn't made with canned soup. One can of soup sends mine and my husband's blood pressure through the roof! I make it according to the directions (except for spraying the baking dish with cooking spray instead of greasing it with butter) if I want an easy, fast recipe; I use the suggestions from the first couple reviews listed (chix broth, evap milk, nutmeg, etc.) if I want something healthier and a little tastier. Good either way!

Pizza On The Grill I

Reviewed: Apr. 9, 2011
I'm never going to want to make pizza in the oven again! This was amazing. I didn't use the dough recipe; I used the one on the back of the pizza dough yeast package and used whole grain white flour for more nutrition. Toppings were the same other than I used an Italian cheese mixture which added more flavor than mozzarella alone would have. Also, we pulled the dough off the grill to put the toppings on and then set it back on the grill, away from the direct heat, to finish cooking. I'm going to try making the Four Cheese Margherita Pizza (on this site) on the grill!
