Authentic Pho

I'm currently making this for the first time, and I will come back to update when I taste the end product. I simmered the bones for awhile and the broth ended up being too strong. I watered it down to taste, measured the broth to see how much there was, and it's right around 7 cups. So, for my own notes and as a point of reference for other people who try this, you'll want to add enough water to make 7 cups of broth after you strain the bones and such out of the broth. Adjust to your preference from there, boiling off water or adding water. I simmered the bone broth for about 7-8 hours total.

All Day Apple Butter

I used 4 heaping teaspoons cinnamon, and a heaping teaspoon of pumpkin pie spice. Delicious! I used my Pampered Chef peeler, corer, slicer thing and you threw the apples in the crock, and then dumped the other ingredients on top. Mixed it around then cooked as directed. I threw it all in the food processor and pureed it after 12 hours on low. It set up perfectly and didn't need that hour of cook time with the lid off. Next time I will try to make it as directed bc it's a little too spicy for me.

Delicious Raspberry Oatmeal Cookie Bars

I didn't have enough brown sugar, accidentally melted the butter because I wasn't paying attention. Couldn't make the 2 C of the mix cover the bottom of the pan so I put the whole bowl in there and used a potato masher to pack it down. Slapped the jelly on top, baked it, went for a walk, came back and devoured a piece. These are REALLY good! Even with my screw ups :)

French Bread

I looked to this recipe to figure out how long to bake French bread. I use a recipe that's printed on the inside of my bread machine. I love using the cornmeal; it gives it a nice crunch. I also love the egg glaze; it gives it extra flavor. Throwing a few ice cubes in really helps with the crust and keeping the bread moist. I have been making this bread almost everyday (the recipe in my bread machine is almost exactly the same-just has an addition of butter or olive oil). ETA: I accidentally left this in the oven for about 35-40 minutes last time, and it turned out even better. I will be baking it longer from now on.

Best Brownies

These are really the best brownies. The frosting is too sweet for me, but that's just personal taste. If you don't typically like frosting on your brownies, don't put it on. Next time I will maybe put a sprinkle of powdered sugar on them. I also use Special Dark cocoa. It makes all the difference in baking chocolate desserts.

Honey Of An Oatmeal Bread

Quick and Easy Chicken Noodle Soup

Hash Brown Casserole II

I made this with 6T of butter instead of a 1/2C (mainly because it was there and I didn't figure it'd make a difference). I also left off the cornflakes because I don't have any. I noticed after the casserole was done that I was supposed to cover it; I baked it uncovered. I also did a full hour as other reviewers suggested. This is AMAZING! I'm taking this one to a potluck, but I'm going to make another one with browned pork breakfast sausage and maybe some spinach for breakfast one morning.

Butterscotch Oatmeal

This is very good. I cut the brown sugar back to 1/4C and I may reduce it even more. I'm used to my oatmeal with just a drizzle of agave though, so I'm still giving this 5 stars due to it just being a matter of different tastes. So, if you like sweet oatmeal, go with what the recipe says. If you like not so sweet, cut it back some.

Enchiladas Suizas

This is my favorite enchiladas recipe. I never fry the tortillas though, and one time all I had was heavy whipping cream. The heavy whipping cream was amazing in this dish and I now make it that way.

Ham Bone Soup

I didn't have a ham bone, but I have tons of leftover ham. So, I threw in a huge chunk (had to be at least 1 lb). I used black beans because I like them better and was out of kidney beans anyway. My 7yo said this soup is amazing...keeper!

Delicious Ham and Potato Soup

This soup is so amazing. I made it as stated other than guesstimating on the amounts. We nearly ate the whole pot. I think I'll be making more tomorrow! Goes great with french bread heated at 400 degrees F til crispy and buttered.

Outrageous Chocolate Chip Cookies

I made these exactly as the recipe says, and I baked them for 12 minutes. They're PERFECT. They're crispy on the outside and soft on the inside. My son asked if I could make these every time from now on LOL! I'm at more than 6000 ft elevation, so for anyone doing high elevation baking, these turn out great!

Whole Wheat Pumpkin-Applesauce Muffins

I followed other reviewers' suggestions to omit the white sugar and oil. I used 1 cup of pumpkin instead of 1/2 cup. They're really good even just a few minutes out of the oven. I can't wait to taste them tomorrow morning! I may try more pumpkin pie spice next time just because I like a really strong spice flavor in pumpkin breads.

Simple Maple Syrup

This recipe is almost exactly the same as the one that's been in my family for generations. I suppose I'm used to it, but I like it runny. That's the way it always was when I was growing up. The only thing different in my recipe is the addition of 1/4 teaspoon of almond extract. Try it. It really adds something to the syrup.

Absolute Best Pancake Syrup

This is pretty good. I wouldn't say it's the best. I didn't have corn syrup, so I omitted it from the recipe. I don't think it's needs it anyway as the syrup is really sweet without it, and the syrup thickens as it sits. My husband and I thought it tasted like candy.

Chocolate Malted Ice Cream

I doubled the chocolate malted milk powder and crushed malted milk balls. I also used half and half in place of the milk. This ice cream is so incredibly creamy! Next time I will halve the amount of sugar since I doubled the malt powder and malted milk balls.

Easy Mint Chocolate Chip Ice Cream

This ice cream tastes just like Breyer's which is my favorite mint chocolate chip ice cream. I used whole milk because that's what I had on hand. I also left out the food coloring because I have never been a fan of green mint choc chip ice cream anyway. Next time I'm going to try half and half in place of the milk to see if it's a little creamier (it has a bit of an ice milk mouth-feel), but I have no complaints about the first batch I made.
