Mahogany Chicken Wings

This was really tasty. I used it on chicken thighs and legs instead of wings. I reduced the chile paste to 1 Tbsp. because I don't like things spicy, but in hindsight, I could have used 2 Tbs and it would have been OK.

I'm giving this 5 starts for its great taste and ease of preparation. I used fettuccine instead of angel hair and it came out fantastic. My whole family raved.

Baked Coconut Shrimp

Wow - this was really fantastic. I was looking for a recipe to make fried coconut shrimp, but decided to give this a try. Now, I will always use this recipe. The shrimp came out so crunchy. Love it.

Yup, this is it - my new go-to meatloaf recipe. Just the right amount of everything. It would be good without the cheese, but it does make it even better.

Coconut Custard Pie II

The custard was delicious. Excellent coconut flavor and nice creamy custard. The topping does really make it, so don't skip that step. I gave it 4 stars instead of 5 because my pie crust came out soggy. I used a frozen crust and there was liquid at the bottom of the pan that made the crust too wet. I don't know if that is due to the crust I chose or if i did something wrong. I would definitely try this recipe again.

Sukhothai Pad Thai

This was good but WAY too sweet. Underneath all the sugar was a good, authentic flavor. I will try this again and decrease the sugar and increase the acid. I had cut the vinegar back to half a cup plus the juice of a lime, which totaled about 3/4 c. Next time, I will use a full cup of vinegar/juice. More tamarind too. Definitely worth another try though.

Stuffed Pork Chops : Claire Robinson : Food Network

This was excellent. Pork came out moist and the sauce was very good. I used dried figs and apricots (soaked in water first). It would also be good with raisins, dried cherries, prunes, etc. Also would be good with bleu cheese or gorgonzola.

This is good but I don't get how it's one of the highest rated recipes on this site. It was just an average bowl of soup in my opinion. It was good, but there are others I would make again before this one.

Foolproof Rib Roast

The high-ratings on this recipe are more for the cooking technique than the actual 4 ingredients. You can play with the spice mix however you want - I doubled the garlic powder and added Montreal Steak seasoning and rosemary. It came out absolutely perfectly. I made this for my Mom on Mother's Day and like some others, I was apprehensive about leaving it in the oven all afternoon, but it worked perfectly. My mom and my husband said it was the best prime rib ever. Thanks!
