My mom gave me this recipe - it's really simple and easy to make. Just cook chicken in water, and shred it while you saute celery and onions. Combine, then add chicken broth, rice, lots of cilantro, seasoning salt and pepper, and chili or tomatoes if you desire. It's a great comfort food for a cold winter day.
