Tomato-Mint Quinoa Salad

Tomato-Mint Quinoa Salad

This recipe was delicious and so easy - I didn't even measure anything. I think I ended up adding more raisins and mint, less radishes, and I cut the sesame oil in half because I often find it overpowering. My aunt made the salad after I shared the recipe with her, and she complained that the cumin flavor was too strong (she used the prescribed measurement; I just sprinkled it on top). Balancing the flavors was something I was wary of while making this, since many of the elements have very distinct characteristics. Another note: I used the leftovers as a garnish for a falafel pita (just bought flatbread and a box-mix) and it was awesome! Much better than your typical cucumber/onion/tomato garnish, especially with the addition of the raisins. I served it with a sour cream, garlic, mint and onion sauce (no yogurt on hand) and it was so yummy - I would definitely make it again.
