Tangy Cucumber and Avocado Salad

easy to make, refreshing--perfect for summer! I'm a cilantro nut so I probably used more than called for in the recipe but I feel like this is one where you can play with the balance (I think I used more lime too!)...delish!! =)

Great Pumpkin Dessert

DELicious!! I am not a baker and this recipe was so easy to make! I followed other reviews and added cinnamon which I thought was a nice touch. I did have to bake it longer and even then, it was very crumbly when I took it out--I had to let it sit overnight and then it held together better. So make this a day or two before you want to serve it and I promise it will be gobbled up immediately! =)

Make Ahead Lunch Wraps

seriously easy and SERIOUSLY delicious!! I did use a bunch of the suggestions and cooked up some onions and red peppers, used salsa instead of the diced tomatoes & chiles, and added taco seasoning (low sodium) to the rice when it was done! I also used less cheese...this was great the night I made it but even BETTER the past few days for lunch!! thanks!!!

Slow Cooker Thai Peanut Pork

this recipe was very tasty but I had issues with the pork--the suggested time for it to cook was way too long and left it dry and flaky...everything else was great though and I didn't have the salt issue like others since I used low sodium teriyaki sauce...and there was a ton of sauce left over so I cooked up some noodles and now have a nice thai noodle dish for lunch! I will definitely try this again but over a weekend when I can watch the pork and make sure it doesn't get overcooked!! I recommend trying--the sauce was just like at a thai restaurant!

Delicious Black Bean Burritos

the name of this recipe is spot-on cause these burritos are DELicious!! I doubled the recipe and did alter it a bit based on suggestions and what I had--I added a can of tom and green chiles, didn't have any cilantro (don't like anyway), cooked up some 90 sec spanish rice to add in, used less fat cream cheese...I've made these three times already and always have a few burritos left eventhough my fiance eats a ton--they're very filling (esp when you add a little rice!) and SO satisfying!! AND they are easy on the wallet!! I will be making these forever!!!

Shrimp, Broccoli, and Sun-dried Tomatoes Scampi with Angel Hair

Thanks to all of the reviewers, this dish was a five star for me!!! I added more garlic, sauteed the broccoli and added some white wine at the end and it was FANtastic!! I even left out the butter to be healthier and it was still that good! I also served it over rice pilaf which is always my route with a scampi--it seems to soak the sauce better and everything gets really happy together! YUM!

California Grilled Veggie Sandwich

excellent! we're always grilling veggies but never thought to put them in a sandwich and the sauce and feta was really a great combo! this would work nicely as a wrap too (save some calories) but the focaccia bread was very tasty!

Spinach and Orzo Salad

this was loved by all! I did sautee the red onion, spinach and pine nuts in some evoo which I would really recommend cause it made the flavors mesh together well and the nuts got nice and toasted! will be making this for a long time--thanks for the recipe!

Homemade Black Bean Veggie Burgers

so excellent! I always add a good amount of hot sauce so then I really don't need any ketchup or even cheese like for a regular burger--it's got enough going on already! will be making these forever!

Pasta with Kielbasa and Sauerkraut

yum yum yum! this was a great surprise to our taste buds!! I loved the combo of the sauerkraut and the pasta and used whole wheat pasta and turkey kielbasa instead of regular which made no difference in the taste, just the calories!! my boyfriend suggested using german beer instead at the end instead of the wine which I will try but I liked the nice sauce that the wine helped create...big hit, thank you!

Buffalo Chicken Rolls

a healthy alternative to buffalo chicken since it's not breaded and it's baked! I did pile on the cheese though haha! we really enjoyed this but both agreed it would be better while watching football or something like that rather than for dinner...very easy though and tasty!

Spinach and Feta Pita Bake

would give this 4 and a 1/2 if I could! this recipe is so quick and easy and I've made it several times since I found it--sometimes for a fast lunch on the weekends! the sundried tom pesto is a nice change from tomato sauce and the pitas really bake up nicely like a crust! I've tried it with goat cheese instead of feta (less caloric value) and it has been very tasty every time!

Asian Tuna Patties

this recipe is so quick and easy and tasty!! one of the few (I'm a new cook) that my boyfriend has asked me to make again and again!! the second time I made them, I upped the asian ingredients to try to heighten that flavor but it was still pretty subtle though nice--I may try to up it even more next time. these remind me a lot of crab cakes which is great because canned tuna is way cheaper than crab!! I made them with the peanut butter noodles like suggested and together it was all fantastic! thanks for sharing!

fantastic!! I used more ginger cause my boyfriend is a big ginger fan and I didn't use the chile paste but this was so easy and just like peanut noodles dishes I've had at restaurants!! great recipe!

Garlic Chicken with Orzo Noodles

tasty!! I followed a bunch of the modification suggestions that I read here and the result was great! using chicken stock (I used low sodium) for the orzo made it so creamy and adding more red pepper flakes/garlic upped the heat and added great flavor! this will be one I always go back to and it made me a big fan of orzo (esp with chicken stock!) which is a pasta that I don't use ever! only thing is, does anyone see whole wheat orzo offered anywhere?
