Individual Baked Eggs

These were great however, I would use cooking spray next time becuase I used the margarine in the bottom and it still stuck to my nonstick pan and I have been soaking it for weeks to get the baked egg off.

Lemon Barbeque Meatloaf

So good! The sauce just carmelizes on top and it is delightful. My husband and I seperate the meat loaf mixture into muffin tins instead of a bread pans or casserole dishes. It makes the perfect serving size and it is easy to serve. Just spray your tin with Pam or a nonstick spary. We can usually fill about a dozen servings to the brim and then add the sauce to the top. Bake it for the same time and garnish each one with a lemon on top. Perfect!

Heavenly Potatoes and Ham

Layered Mexican Dip

Good for about a 1/2 hour and then the yogurt turns really runny and starts to seperate. I'm not sure how to make it so it doesn't do this but I am up for any suggestions. Probably won't make it again.

Slow Cooked Corned Beef for Sandwiches

Everyone loved this. Just make sure you don't add any salt. Cornbeef does that for you naturally. I would serve some rolls with it. Very filling.

Sweet and Sour Chicken Stir Fry

I didn't have any apricot preserves so I used Orange Marmalade instead and it turned out great. We served it with rice and it made a nice meal for the two of us and some left over for my hubby's lunch the next day.

Teriyaki Onion Burgers

Yummy. Served this as a quick recipe when I found out my Mother-in-law was coming to dinner. She loved in and hates to eat meat. Lots of flavor and still tastes like a great burger. We will put pineapple rings on it next time.

Easy, Eggless Strawberry Ice Cream

This was so good! I made it for teenage girls and they loved it. Very good recipe and super easy. I have made this several more times and substituted the strawberries for 1 cup of rasperries and it is amazing. You can also omit the rasperries and add more vanilla and it makes perfect Vanilla ice cream too. Thank you!!
