About this Cook
I have a goal this year to be a great cook and I am starting from scratch. I just made my first purchase from the butcher at the grocery store instead of the frozen foods section. I have been married just over two years and I love to cook and try new foods.
My favorite things to cook
I love to cook fish and anything mexican. I also love cheap, quick and easy recipes. I love to cook like it cost a million bucks but I made it for less than $5.00.
My favorite family cooking traditions
My family only cooked on Christmas and Thanksgiving. I love the holidays because the food is all homemade.
My cooking triumphs
Anytime my husband asks to have the dish I made again. It makes me feel like I am a gourmet chef.
My cooking tragedies
I made some Asian pasta one time and misread the recipe. I added a tablespoon of chili flakes instead of a 1/2 teaspoon and we couldn't even eat the dish without a big chugg of milk between every bite. Even my lips were on fire from licking them after I ate the pasta. It was a Hot night!

Individual Baked Eggs
These were great however, I would use cooking spray next time becuase I used the margarine in the bottom and it still stuck to my nonstick pan and I have been soaking it for weeks to get the baked egg off.

Lemon Barbeque Meatloaf
So good! The sauce just carmelizes on top and it is delightful. My husband and I seperate the meat loaf mixture into muffin tins instead of a bread pans or casserole dishes. It makes the perfect serving size and it is easy to serve. Just spray your tin with Pam or a nonstick spary. We can usually fill about a dozen servings to the brim and then add the sauce to the top. Bake it for the same time and garnish each one with a lemon on top. Perfect!

Heavenly Potatoes and Ham
Very yummy and good for leftovers. I just cut up deli meat for the recipe and it turns out great.
