Not my most favorite, but it was good. It was a bit too cheese like for my taste. Not so silky & creamy. Good lime flavor though.

Penne with Spring Vegetables

I just made this for dinner and it was fantastic! I sauteed a small onion, sliced with the asparagus in a large saute pan. Then added a clove of minced garlic and a pinch of red pepper and salt. Then I added the snap peas and let it all cook for about 15-20 minutes. Served over the cooked penne drizzled with a bit of olive oil.

Marrakesh Vegetable Curry

I am trying to expand our meal variety and this was delicious! My husband said he was shocked it was so good! I have to say, it doesn't get very high presentation points, but the taste and combination of flavors was amazing. We don't like it too spicy, so I only added a bit over 1/4 tsp cayenne pepper. Will definitely make again!

Black Bean Vegetable Soup

This was really good! I substituted 1/4 cup taco seasoning for the chili powder for a more taco soup taste. I also only pureed half the tomatoes with the black beans. I had a bit of rice leftover that I added with my bowl to see how it tasted. It was really good! We also ate it with tortilla chips. Yummy! Will make it again!

Truck-Stop Buttermilk Pancakes

These have a nice buttery flavor. I am still on the search for big FLUFFY pancakes. These were very good though. I used whole wheat flour and so they had a nice texture.

This was really good! My kids ate it and that is awesome! The only thing I would change is use less bread crumbs (maybe 1/3 C) and omit the flour. But I will be making it again!

Cabbage Rolls II

I really liked this! And my family did too! I thought that cabbage rolls were more of an Asian dish, so I tweeked it a bit. I didn't do the tomato sauce mixture and I didn't cook it in a slow cooker. Instead, I precooked the beef and stuffed the cabbage leaves as directed, minus the salt. Then I put them in a big 12" saute pan with about 1/2C of soy sauce. Covered it and let it simmer for about 30 minutes, turning the rolls 1/2 way through. Fantastic!!

Chewy Caramel

WOW!! Delicious. Soft. Chewy. Buttery. Heaven. I cooked it to 242 and used it for a few caramel apples. I had some leftover so a sprayed a bowl with Pam and poured it in and let it cool. I was later able to dump it in a crockpot, heat on low and used it again when I did more. Awesome!

Brown Sugar Meatloaf

I really liked this. I pressed it into a bread pan, but next time I think I will make it a log instead. Then the caramelization can get all over the whole thing and not just the bottom (top-when you flip it over). I also would decrease the sugar just a bit. It was pretty sweet.
