Peruvian Chicken Soup (Aguadito de Pollo)

This is super popular with everyone I've made it for. However, I do make my own chicken stock, and I shred the chicken instead of using pieces - also, I make the rice separately - because if you store it all together, the rice sucks up the stock and your leftovers are kind of gross and soggy. Also, a little less potatoe.

Southwestern Pasta Salad

This was pretty good, but a little too much. There was too much oil, too much cumin, too much chili powder. I think next time I make it, if I go with this recipe, I'll cut down on the spices and add more fresh veggies.

Fried Cabbage II

My two favorite words: cabbage and bacon. This is really good. I cook Irish a lot and this is the perfect side or accompaniment to a breakfast. I think the next time I make this, I'll use a touch less vinegar and drain just a tiny bit of the grease. And then, I plan to put a fried egg over medium on top of my serving. Is tomorrow too soon for that? Probably not.

Easy Spicy Roasted Potatoes

This recipe was only good. I made it at a BBQ where everything was spicy and grilled and it didn't really compare. So I made a second batch, added a pinch of turmeric, used fresh garlic and sprinkled it with cayenne as well as the chili powder. When I pulled it out of the oven, I topped it with fresh cilantro and the entire 9X13 was gone in under 5 minutes. The original sat sadly, weeping.

Spanish Garlic Soup

As a lover of garlic soup (and soup in general) this was quite a tasty starter. I didn't change anything except I used green and red peppers for color. Next time I might add a few pepper flakes for a kick. I served it with a light penne with more of the peppers and a tomato-parm overlay. It was a hit.

Beer Margaritas

These ARE super good. I recommend keeping the recipe the same. Lemonade makes it too sweet. We also add extra tequila. Super easy, not too expensive, popular - goes a long way.

Steamed Mussels II

This is pretty good, and SUPER simple. I haven't spent a lot of time cooking mussels, and I knew I wanted butter and white wine. This was perfect. I took the advice of another reviewer and added an additional tablespoon of butter. I can see adding garlic to this too. We served it on top of a bed of linguine - great.

Skillet Beef and Celery

This is a great recipe if you're cooking for people that don't like a lot of flavor. If you're making it for yourself, I recommend adding a few sprinkles of cayenne to spice it up. Also you can do this with chicken, just make the broth chicken broth. And the cook time is lower.

Chicken Breast Stuffed with Spinach Blue Cheese and Bacon

This recipe is amazing. And really good if you're cooking for a date. I use fresh spinach blanched in the bacon grease and then I use the rest of the spinach for a side salad. Also try other varieties of blue cheese like gorgonzola.

Layered Chicken and Black Bean Enchilada Casserole

This is SUPER easy to make. Great for a beginning cook. The only thing(s) I would change: Add salt to the chicken when you are cooking it. Never be afraid to add more cumin (to anything) if you like it. Also, I think it's a little heavy on the sour cream. Unless you're one of those people that eats sour cream with everything. Also - I accidentally picked up black bean refried beans instead of regular black beans... I think it might even be better this way. Try it. Oh yeah, and if you like a kick, I added 2 fresh serranos into the chicken mix. Next time I'll probably add 3 or 4.
