Canadian Maple Rice Pudding

My husband is on a low cholesterol diet, so no potatoes but whole grain rice is permitted, so a bonus that he can have it for dessert too. It was nice to find this recipe that didn't call for custard (no eggs!). I cut the sugar in half & used low fat milk, & we still enjoyed it.

Manicotti Italian Casserole

Everyone enjoyed this dish; It wasn't the usual (ho hum) pasta casserole. I think it was the Italian sausage that gave it a heartier flavour. I'm about to make it again & this time I'll add spinach to it. It's one of those wonderful recipes that it never has to be the same thing twice!

Can't Tell They're Low-fat Brownies

Good thing this recipe is low fat because 10 hours later, all that's left is a pan for me to wash! I added an extra 1/2 T of cocoa & substituted whole wheat flour for A/P & melted butter for vegetable oil. The result were chewy, extra moist brownines with less guilt. I've already saved it o my recipe box!

Peanut Butter Ice Cream Topping

I went with VOODOOMISS's suggestion & made this recipe with 1/3 c. sugar, 1/3 c water, then 2/3 c. pb. After I stirred to blend, I just used a whisk to fluff it up. Turned out exactly how i wanted it to.

Very Best Blueberry Cobbler!

I used 4 cups of fresh blueberries & 1/2 cup sugar on them. Overall the taste was good, but the blueberry base was too dry for my liking. I guess more sugar would have made a syrup, but didnt want it too sweet. I'll add vanilla yogurt to my portion & it should be delish!

Roasted Vegetable Lasagna

I've never worked with eggplant so I asked my local produce manager how to handle & prepare it. Afterwards I read this recipe over again before I started & was then completely confused & hesitant to make it! Not any mention of salting & rinsing the eggplant! So I blindly followed the recipe & it was delish! I divided the pasta sauce in half & added Italian seasoned diced tomatoes for more texture. Also mixed Ricotta & cottage cheese & added spinach. Made this to take to a family event & had NO idea what it would taste like, so I put my faith in my lovely niece Laura (no stranger to vegetarian dishes) to be honest with me. Thumbs up all the way, so I will make it again!

Peanut Butter and Banana Dog Biscuits

I usually hate getting out the rolling pin, but I wanted to make bone shape dog cookies for a craft show. This recipe is SO easy & actually fun to make, the dough is just right to work with too. The 1st batch is still in the oven & Quinn, my lab/retriever mix pup is waiting to be taste tester. I know she'll give this 5 stars; then again she eats anything that fits into her mouth!

Zucchini Brownies

I'm glad I read some reviews before I made these brownies, otherwise when it came to the dry batter I would have thought I'd gone wrong somewhere. I only had 1/4 cup cocoa left, & both my neighbours were completely out of cocoa (the nerve!) so I tossed probably 1/2 cup of chocolate chips into the mix. The brownies turned out delish! I don't like anything too sweet & was scant on the white sugar, more like 11/4 cups, but the ch chips would have made up for it. Next time, with all cocoa I'll adjust the sugar to a bit less. Good though & nice texture. This recipe is a keeper.

Chocolate Crinkles II

What a marvelous little recipe! I've never made these before & wasn't sure what to expect. To me they are a round, snowy brownie. After cooling, I dropped the individual spoonfuls of dough directly onto a saucer of icing sugar. Then I dusted my palms with icing sugar when I rolled them to keep from sticking & heating up in my hands. Worked perfectly! Off to a cookie exchange tomorrow, happily taking my Crinkles. Thanks Ingrid.

Cheese Sauce

Nope, did not turn out for me either. I'm wondering if it could be the type of cheese used, or even milk. I always use skim milk, but mayb whole or 2% would be better.

Blueberry Walnut Bread

This is a nice tasting bread & easy to make. I ended up cutting it in half & placing into an oven ready pan & baking at 375F oven for about 10 minutes to finish cooking it as the top & down the centre didn't cook. The texture is nice. I added shelled sunflower seeds instead of walnuts. I'll make it again but maybe just mix longer & bake in the oven.

Cassie's Zucchini Brownies

I like a fudgy brownie, but thought I'd try this recipe. It is a cake texture, but very moist, so it's a keeper. I whisked the eggs until frothy, used melted butter instead of vegetable oil & probably an extra 1/2 cup of zucchini (peeled) so maybe that made a difference, s it wasn't dry. Not too sweet, but I like it that way. Add chocolate icing if you want more chocolate.

McCormick® White Chocolate Kissed Gingerbread Cookies

This is a nice light cookie. Light on taste, for those who don't want a strong gingerbread & light on consistency. I added a pinch more of each spice that was called for, & once I rolled the individual balls, I used a juice glass to press them down a bit, then lightly dabbed each side in a saucer of granulated sugar. Altho I have a sweet tooth, I don't like a real sweet cookie, so I nixed the chocolate kiss & instead crushed up a candy cane (cinnamon one, but any kind would do) & pressed a few teeny pieces into the top for a bit of colour;

Jen's Microwave Doggie Donuts

You can't find anything easier than this recipe, however I didn't want to microwave these. I actually made 2 different batches, one with whole wheat flour & chicken broth & the other with spelt flour & beef broth. I used 3-4 T of oats & probably & kneaded more flour in until stickiness gone. Roll out to no more than 1/4" on floured surface (lots of flour!). Then, I cut strips about 1/3" x 3" & twisted each end in opposite directions so it looks like a twisted skinny breadstick. I also used a 4" round cutter, then with a pastry cutter devided each round into 6 pie shaped pieces. Looks like little nacho chips! I baked these at 300 for 30 minutes for the chips & 45 minutes for the twists. Quinn, my lab-retriever mix loved them, but then again, she'll eat anything that isn't a rock.
