Kerri's Holiday Punch

This punch is fabulous! I made it at my birthday party last year and I plan on doing so again for my birthday in a few weeks. I followed the recipe exactly, except I left out the orange slices and added cherries/cherry juice from the jar. This was much better tasting that I expected, and it was surprisingly, secretly pretty strong. I made two batches and they were both gone in less than 2 hours. Yum!

Hot Pizza Dip

This dip was fantastic! I am giving 4 stars for now because I had forgotten all about it after making it over a year ago, so I can't rank it as high as my 3 other go-to dips for football Sundays. I am going to make it this weekend, though, so maybe I will fall in love all over again. I used green pepper, grilled onion, and giardineria for my toppings. I baked it to ooey gooey perfection and everyone loved it!

Jalapeno Popper Spread

I served at Half Time and it was GONE by the time the Bears were back on! Sooooo good! The store was completely out of canned jalapenos, so I carefully chopped up 1/2 c. jalapeno rings from a jar. Also mixed the fresh parmesan with 1/2 c. breadcrumbs before topping the dip. Served with Ritz, but I swear I could've eaten with a fork! Very rich, though = tummy ache the next day lol

Ultimate Twice Baked Potatoes

Fantastic! No bacon. Sauteed just a tiny bit of onion and garlic and added to mixture. Topped with cheddar and parmesan. Perfect!

Grilled Portobello Mushrooms

Yummy! Made some changes...I added about 1/4 c. balsamic vinegar to the marinade and this really made the flavor! I topped mine with sauteed onion and garlic (instead of bell pepper), and covered the top with shredded parmesan. I baked in the oven on foil for about 15 mins on 375 until the cheese was melty. Even my carnivore boyfriend loved them!

Chicken Wing Dip

AMAZING! My new favorite dip ever! I made this for Superbowl and everyone loved it. I used a small bottle of Frank's Buffalo Wing Sauce (maybe 1 1/4 c.) and Marie's Super Blue Cheese dressing instead of ranch. I followed suggestions and omitted the cheddar cheese from the mixture, but sprinkled it on top instead after it baked 10 minutes. Also, another thing I changed that most people wouldn't is I substituted the chicken with diced up Trader Joe's "Chicken-less Chicken Strips" because I'm a vegetarian. only added 1 cup instead of 2. I was the only veg-head at the party and everyone still loved it (yes even carnivorous football boys!). Serve with Fritos and YUM!!

Four Cheese Macaroni

Amazing! Despite the fact that this is so incredibly bad for you, it really is worth it (at least once or twice a year!). I doubled this recipe and made it for Thanksgiving and a holiday party. It serves way more than it states on the recipe and, unless it was the main course, I would never double it again. I doubled the amount of half and half, but next time I might use a little bit less. I could ony find slices of Muenster, so I had to cut it up by hand which was a pain, so the second time I used Mozzerella instead. Either way delicious!

Broccoli Casserole

I made this for Thanksgiving, but I totally goofed! I didn't realize until I was serving it that I forgot to add the cream of mushroom soup!! BUT, honestly, it was still soooo yummy. Without the soup the texture and flavor of the dish was different than intended, but it was so good I'm not sure that I would even use the soup the next time. Maybe just some more cheese.

Gulliver's Cream Corn

Fantastic! I doubled the recipe and made this for a large Thanksgiving crowd and again for a Holiday party. I omitted the MSG, used evaporated milk instead of regular, and used about 25% less corn than suggested. Yummy!

Seven Layer Tortilla Pie

I made this last night and even my very carnivorous boyfriend loved it! I followed some of the tips here and really spiced it up. I agree that baking the tortillas for 5 mins first kept them crispy as opposed to soggy. I used 1-1/2 cans of fat free refried pinto beans instead of mashed whole beans, and I added lots of chile powder and "Mexican Spices" (pre-mixed spice bottle) to the mixture. For the black bean mix, I added a small can of green chiles, some chile powder, and substitued red bell pepper for the tomatoes. I also added sliced jalepenos to the top of each pinto bean layer. To keep it healthier I omitted the sour cram and used reduced fat mexican-blend cheese. The prep took some time but it was definitely yummy!
