Baked Tomatoes Oregano

We like tomatoes prepared this way very much. Using Romano cheese gave it the salty taste and the bread crumbs gave it the crunch. Great side for the very little effort. I used Heirloom Tomatoes purchased at the Farm Stand.

Pumpkin Cake

Super moist and super delicious. I am always looking for a good pumpkin recipe this time of year. I think I've found the perfect one. I made cupcakes and omitted the chopped nuts.

Cream Cheese Frosting II

This Cream Cheese Frosting is very CREAMY! I suspect it's the 2 packages of cream cheese in it instead of the usual one. I like the fact that it only takes 2 cups of powdered sugar too. My husband said the cream cheese flavor really comes through. I will make this again when I need a Cream Cheese Frostin.

Peanut Butter Frosting

This is a really great P-nut butter frosting because of it's creamy texture. I think adding cream is what makes this one a keeper. I've tried others, but this one is the best so far. Drizzling fudge sauce on top and sprinkling with Kosher Salt took it over the top. They were given to my wonderful neighbor for mowing my lawn! His review; FANTASTIC Candice. Will you please make me some more. LOL!

Creamy Banana Soft Serve

This is perfect! I used Dutch Cocoa Powder gifted to me by Marianne. I also added in the Peanut Butter. Then scooped into a freezer container for 1 hour so it would roll nicely into an ice cream scoop. Placed in a Sunday dish and topped with chopped Almonds. I have 3 words for this recipe: Dee-lish-us!!! Just perfect for dessert or snack. A very rich and satisfying recipe using NO dairy what-so-ever. You'd never know, it's that creamy.

Banana Split Muffins

This is a WONDERFUL recipe and I cannot wait to make with the GrandGals. So easy and so rich. I love that no frosting is needed. I eat way too much! I will tweak as others have mentioned in previous reviews, but this recipe stands EXCELLENT on it's own. My neighbor LOVED them too. In fact, between him, DH and myself, they're all gone!

Oatmeal Banana Cupcakes

This recipe is sooooo yummy, although it really is more like a muffin than a cupcake. (Am I back to the different between a muffin and cupcake?) No matter, these are going into my regular Muffin rotation file. They are healthy too using only 1/2 cup sugar and 3/4 cup honey. I love to cook using local honey because of my alergies. So, this is a "for sure" keeper! Also, I had to use extreme control because I wanted to add nuts, but I didn't and they were wonderful. I may add nuts the next, I may not. GREAT muffin recipe! Thank you Louise!

Wedding Cake Frosting

This is my go-to frosting for large quantities of cupcakes. I only used 3 cups of powdered sugar on these cupcakes and 3 tablespoons of whipping cream. With the very rich chocolate cake (Fabulous Fudge Chocolate Cake) is was perfect smooth and not too sweet.

Refreshing Limoncello Cake

DD requested Lemon CCs with Chocolate frosting for her birthday. These ARE "lemony" and rich and moist. We especially liked the "Limoncello" drizzle because it hardens and becomes a crunchy little surprise under the frosting. Look closely at the photo; you can see a shiney little crust between the CC top and frosting. They were a huge HIT and I will most certainly be making these again. The frosting is Wedding Cake Frosting from this site.

Mi's Baked Beans For A Crowd

I've made every baked bean recipe under the sun and have found none better than this delicious one by Mi Being Mi. It's thick and sweet and gooey like great baked beans should be. Reminds my family of the baked beans we get at Izzy's, a local Restaurant in my town. I made them exactly as the recipe is written to serve at our Father's Day bbq. They were loved by every member of my family and hailed as our new family baked bean dish. Thank you Sheila for creating this yummy recipe. We LOVE it!

Best Ever Cilantro Corn Salsa

Ooohhh, this is good! I made two changes or substitutions to the recipe. 2 tablespoons olive oil was subbed with 2 tablespoons "garlic olive oil" (gifted to me by Marianne) and the 3 tablespoons chopped garlic was omitted. I also used Seasoned Salt from Hawaai (gifted to me by Mauigirl... now that stuff's good!) instead of Kosher salt. We topped salad greens with this oh so yummy salsa and called it dinner. Corn chips added the crunch factor. I will be making this many times this summer. Both as a salad for dinner and as salsa.

Rhubarb Muffins

This is a good basic muffin recipe for Rhubarb. I so wanted to add walnuts, but followed the recipe exactly. (except I use Lactose Free milk in ALL recipes calling for milk) These were real good, just didn't knock my socks off. I will try other recipes. And, maybe come back and tweak this one. Oh, and Hubby said to half the nutmeg. It had almost too much nutmeg taste.

Rhubarb Bread Pudding

This is soooooo good! We ate half and I gave half to our own AVON! I added 1 extra cup of diced rhubard and 3/4 cup chopped walnuts. It bakes up beautifully. A MUST make again recipe. Served warm with Cool Whip (non-dairy) Topping. This is melt in your mouth good!

Sweet Onion Pie

I made one substitution to the ingredient list, and followed the recipe exactly. I used a store-bought pie crust in a pie tin, because I had two in the freezer I needed to use. This dish was just downright delicious! My husband asked me if I put sugar in it. I used Sweet Vidalia Onions and carmelized them per the instructions, so I'll assume that's the reason it was so sweet. We both loved this dish and so did DD Christine NICU-RN. I will be making again very soon.... until the end of the Vidalia Onion season and those sweet gems are no longer in my local super market. Also, I don't think I will try the buttery cracker crust. I don't need to. It was good using the premade crust.

Cinco De Mayo Salad

Made for our Cinco de Mayo gathering: The reviews from everyone was “Santo Guacamole!” (Holy Guacamole!) This is SO delicious! I made it exactly as written with no changes or substitutions. It’s perfect, delicious and filling. This is my new favorite salad. I made it for May 5th, and I’ll make it for July 4th, August 3rd, September 2, and October 1st. Absolutely LOVE this salad!!!

Schiacciata alla Fiorentina or Italian Easter Cake

I don't just make this cake at Easter, but all through the year. My husband just loves it. Recently I've added 1/4 teaspoon Cardamom and Yowza!!!! is that good to. It's a basic orangey sponge cake that's so easy to make. Just dump and stir til mixed, bake and eat. Most of the time, I don't even ice it, we just eat it til it's gone. YUM and YUM!!!

Awesome Asparagus Sandwich

This was so good! The roasted red pepper goes so well with the Asparagus. The swiss cheese didn't overpower the taste of the asparagus either. Toasty and tastey. The dressing was a little runny, but it was good. I think this sandwich would make up nicely as a paninni too.

Onion-Roasted Potatoes

I had these last week at my monthly Book Club. After one bite all I could "discuss" was these delicious potatoes. My book club friend was kind enough to give me the recipe. Funny thing is; she directed me to AR.... something I'm usually doing. These are just about the easiest and tastiest potatoes going. If I could, I'd give this recipe 10 Stars!

3 Meal Deal (One cut of meat, THREE meals) week of 2/6/2012

This 3 Meal Deal Menu was just what I had in mind ... One cut of meat that would yield three full meals complete with all the sides. Truth be told, we actually had leftovers of Meal One, Two AND Three. I'm using up pantry items AND saving money.

Terry's Texas Pinto Beans

This is a very good SIDE dish bean recipe. As one reviewer said, "it's good without the addition of any meat." I totally agree. I made it exactly as written with no changes. I did however soak the beans for about 2 hours first, then rinsed and proceeded. They were very good. I will most certainly make again.
