BLT Inspired Pasta Salad

During hot weather it seems like salads are an easier, cooler option for dinner. And lately I've been making Pasta Salads. My latest creation was inspired by my love of Bacon, Lettuce and Tomatoe sandwiches. (We also eat lots of sandwiches during the summer months. I love a good and creatively made sandwich!) So, I got to thinking; it would so easy to make a BLT pasta salad. I boiled green spiral pasta noodles,....that's the lettuce equivilent. Oh! BTW, there is a trick to cooking pasta for making pasta salad. Do not cook according to package directions. Only cook the pasta 1/2 or 2/3 of the recommended cooking time.  Immediately remove from heat and cool off under cold water to stop the cooking. The pasta seems to hold up better in the salad when slightly undercooked. Drain well, then add diced hard boiled egges, diced and fried bacon with drippings and stir in mayonaise. I also added diced onions and celery, S&P and some rice vinegar for some zip! I cannot tell you how good this is. In fact I got up this morning and had a small bowl for breakfast with my coffee. Hey, it has bacon and eggs in it!  Hmmmmm, wonder what else I can come up with? I do love cold bar-b-qued steak.

I love inventing pasta salads too for the summer. People often ask, what is your recipe, well I am not help because every time I make it, it is different. I should just call it "kitchen sink pasta"

Inspired! I am presently on a no-bread/pasta/rice diet, so I am always looking for combinations that will stand up without the carbs. A BLT with some red onion and the right dressing...yum!
