They'll be no cooking at this house tonight! Nope, nuh-uh, no way! So what's for dinner? My favorite sandwich in the whole wide world. Cheddar Apple. So easy, so good and yes, I think it's even heathly too!

Recipe: Your favorite bread, regular yellow mustard, mayo, sliced cruncy apple...I like Gala, medium cheddar cheese, sunflower seeds, sprouts and your favorite lettuce. Lightly spread both slices bread with mayo and mustard, coat with a generous covering of sunflower seeds. Layer on the lettuce...a sparse leaf, lots of unpeeled sliced apples, sliced cheese, thin layer of sprouts and the other slice of bread. Serve with Corn Tortilla Chips. This truly is so yummy, you will want to eat an apple sandwich a day. Hehehe!

Hi Candice, I have never really gotten the whole apple and cheese goes together thing. I like them separate but don't think of eating them at the same time. I made http://allrecipes.com/PersonalRecipe/62164285/Green-Chicken-Enchiladas/Detail.aspx from scratch. I had all day, well, 1/2 the day and roasted off 3 different peppers(pablano,Calif. and 3 jalapenos), as well as the tomatillo's, pulsed up the cilantro/onion and boiled up some chicken thighs, Earthquake!!! NOW!! Yikkess! For real! Well, it stopped swaying. WOW! Anywho, I added whipping cream and chicken bouillon. shredded the cheese and fried the tortillas. Assembled and popped in the oven. OUTSTANDING! I would rather have my enchiladas without the Rock N Roll! LOL

OMG Patty, does that bring back memories! I grew up in So Cal, and moved to the PNW after the BIG Earthquake in the early 70's. But, alas, I do miss that wonderful Mexican food only Californians can truly appreciate and imitate. I made homemade enchildas from scratch and Spanish Rice the Monday after Father's Day. I grew up on that stuff and nowhere in Oregon can you get good Mexican food; or should I say California Mexican food.

Apparently, I slept through That earthquake even tho it moved our house 4 or 5 inches! I was only about 4 yo! LOL It is a strange feeling. And you never know if it's THE BIG ONE!! My hubby swears that it is really getting close with all the ones we are having down near San Diego. I would like to move to Oregon! TODAY! LOL

It is very beautiful here and you can grow absolutely anything! Still a whopping 99 degrees though this evening.
