Quick Enchilada Sauce

Quick, easy & made with ingredients I usually have on hand AND it tastes much better than the typical watery canned stuff. I'm sure you could make a more authentic sauce but this is a great sub for the canned stuff. I use this all the time now in place of canned. It's a good, basic red sauce. Very useful recipe.

Cinnamon Streusel Orange Muffins

I thought these were really good. I used fresh squeezed orange juice (2 oranges) & added the zest of one orange to the wet ingredients. I also used plain greek yogurt instead of buttermilk as I didn't have any buttermilk. They were delicious! The orange flavor was just right but probably wouldn't have been enough without the zest. As another reviewer said, be sure to put the middle cinnamon stuff on after half filling the muffin tins in order to have enough batter left to cover. Also, the topping is more than enough. I had some left over & was still very generous with it. This made 12 big muffins.

Quinoa Black Bean Burgers

I've never made or even eaten a black bean burger before, these are really good! I followed the recipe exactly except for the yellow pepper which I didn't have. I had it on a sandwich thin with a little shredded cheddar cheese, lemon-garlic mayo & pickles. Very tasty & quite filling. I am freezing the remaining patties (after cooking) & curious to see how they turn out. I did not have any problem with the patties sticking together but I did dry the black beans well, draining on paper towels on a cookie sheet & blotting with a paper towel. I read somewhere that that will help them stick together & I think it does. I will definitely make these again. Good, nutritious and versatile.

Donut Muffins

My 10 yr old daughter & I made these this a.m. We followed the recipe exactly & they were very tasty. We coated the entire muffin with cinnamon suger, which was a bit too sugary for me but the kids loved them. They do taste like little donuts. Very good!

Asian Cucumber Salad

Really good! I halved the recipe & used 1 cucumber. I think half the dressing would be plenty for 2 cucs as well. Yummy! I have already made this twice.

Baked Creamy Chicken Taquitos Recipe - Tablespoon

I saved this weblink because I wanted to try it. Well now I have & they are YUMMY! I left out the green onions & cilantro as I didn't have them & used a mexican blend of shredded cheese. These were great! They have a nice kick, just right for me, but you can very easily adjust the spices. This is the first time I've made taquitos & I didn't miss them being fried at all. I will definitely make again.

African Peanut Soup

I didn't think I would like this as I was making it, but in the end it was pretty good. I made half the recipe, added more chili powder (dbl or triple at least) + a dash of cinnamon & threw in a little cooked chicken. Probably a bit more peanut butter too. It thickens up after adding the peanut butter. It is pretty tasty. I may try using salsa instead of the tomatoes. It does need a little more spice in my opinion. Overall, very good.

Baked Potato Soup

This is really good! I made the recipe exactly as is minus the hot sauce. I do use a hand blender to mix it in the pot, leaving a few chunks, otherwise it is too watery. I actually bought the hand blender just for this recipe & I highly recommend one. Well worth the $20, esp. since I will be making this again & again. I wanted it to be thick like most of the potato soups at restaurants. Excellent! I use a whole pkg of bacon though as 3 strips doesn't give you much bits at all. My whole family likes this. Definitely a keeper!

Easy Pizza Sauce I

Definitely use WAY LESS water. I find that filling the 6 oz tomato paste can is just about right, may need a tad more but it's easy to adjust to the right consistency. The first time I made this I used the full amount stated in the recipe & had to thicken it up with additional tomato paste. However, this is very tasty & easy. I find it to be MUCH better than the jarred sauce I used to keep on hand. It definitely tastes better after sitting for several hours (refrigerated of course). I haven't bought jarred sauce now forever!

Lentil Soup III

This is really good & really easy, a definite plus. I work at home & have it for lunch frequently. I add some sliced carrots when sauteeing the onions & garlic. Easy to tweak but very tasty as is. The lemon juice & sour cream topping is surprisingly good. I also top with some shredded cheese. Yum!

Rempel Family Meatloaf

I'm another one that doesn't usually like meatloaf that much but I saw the good reviews & decided to try it. Very good! Easy too. I followed the recipe exactly except that I didn't have any onion soup mix so used this substitute that I found on Food.com - (1/4 c dried onion flakes, 2T beef bouillon granules, 1/4 tsp onion powder, 1/4 tsp parsley flakes, 1/8 tsp celery seed, 1/8 tsp paprika, 1/8 tsp pepper). Everyone liked it, including 10 y/o & 19 mo. sons. Only my 8 y/o daughter did not, but she doesn't count since she wouldn't even TRY it. This is a keeper. I will make this again. *Also I used Ritz wheat crackers & the glaze that another reviewer suggested - 3T ketchup, 1T honey, 1/2 T worschetshire. Delicious!

Blueberry Crumb Bars

This is sooo delicious! I used butter instead of shortening. Also used half brown sugar & half white, 1C wheat flour, the rest white. It is incredibly tasty & it keeps really well. This is a keeper! You must make this - so worth it!

Chipotle Crusted Pork Tenderloin

Very good & so easy! I cut the chipotle chile down to one big teaspoon & it was plenty. Nice blend of sweet & spicy. 3T would be HOT for sure. My 9 & 7 yr old both liked it, a little spicy for the 7 yr old but you can cut off the spicy crust. I will make this again for sure.

Chocolate Chip Banana Muffins

Slow Cooker Chicken Taco Soup

Very tasty, filling & super-easy! I followed the recipe (used a bit less onion as that's all I had) & I used the beer (12 oz bud lite). Delicious topped with cheese, sour cream & tortilla chips. Definitely a keeper.
