Sausage Casserole II

I seldom make "breakfast" type casseroles but while attempting to do the low carb thing with my diet...this recipe popped up in the search. I made it with some changes that others suggested in their reviews...added a couple of eggs and cooked the onion with the sausage. I used one package of the "Simply Potatoes" hash browns as the base as well. I also added some gruyere cheese with the cheddar. Not only was this casserole delicious last night for dinner...but it tasted just as great reheated this morning! WIN. Now I will put the leftovers in the freezer in single portions and see if the flavor manages the freezing process just as well. All in all a stellar recipe which I recommend whole heartedly. A hint on your cheese....grate it yourself, while this adds to the work a bit it will melt much more nicely. Those pre-packaged grated cheeses often dry out a bit or have an ingredient incorporated that helps prevent sticking.

Mini Cheesecake Bites

Made these for my daughter's bridal shower. What a hit. I used the mini phyllo dough shells (ready to go right out of the freezer). I put the cheesecake mixture into a sandwich bag and clipped one corner off and piped it into the shells. Then I put a single fresh raspberry and then melted dark chocolate in a sandwich bag, cut a very small tip off one corner and drizzled the chocolate over. Very easy, very elegant. A keeper for sure. Thanks for sharing. The sandwich bag trick is a BIG mess and time saver.

Beth's Spicy Oatmeal Raisin Cookies

Made a double batch as I always like to share. I made half with craisens and white chocolate chips. The rest I made plain. These are delicious. I baked them on parchment paper which I love to do with cookies for fast and easy cleanup and cooling. These are perfect chewy oatmeal cookies, you can't go wrong.

Gourmet Mushroom Risotto

Amazing, simply amazing. I made it with white mushrooms and shitake musrooms. I also doubled the wine and cut back on the broth. I have never ever made from scratch risotto....what a lot of time wasted. This was perfect with grilled flatiron steaks and asparagus.
