White Chocolate Fudge

I made multiple batches and definitely recommend not making it plain. On its own it is over-poweringly sweet. If you don't like nuts I made a batch with crunched up pretzels in it and that was a big hit.

Million Dollar Fudge

This was a big hit. If you are really quick you can spoon it into cupcake papers before it starts to set up and make cute little mini-fudges to give to neighbors and friends.

Eric's Best New York Style Cheesecake

This recipe makes almost twice what you need. It will bubble over the edge if you make it in the proportions the recipe lists. I put a crust on the bottom and cut it in half. You also don't need to go to the trouble of wrapping the pan in foil and doing a bath. If you take a cookie sheet and fill it with water it provides enough humidity to keep it from cracking. Cook it for the first 20 minutes on the 375 listed, but after 20 minutes turn it down to 325. It will burn on top if you cook it for a full hour on 375. Make sure to let it cool in the oven or else it will not come out flat on top. (I personally like to double the amaretto.)

Black Bean, Corn and Turkey Chili

To make it vegetarian I skipped the turkey, added an extra can of beans, and used veggie broth. Super good recipe. I also like to squeeze a quarter of a lime over the top of the each bowl before serving it.

Mock Chicken

This worked so easily! I loved the texture and the tofu held up very well, did not crumble at all. (I did not simmer the package it in water to defrost it. I just left it on the counter until it was soft again and it worked just fine.)

Black Bean Rice Burgers

I added some about a tsp of liquid smoke, a tablespoon of minced garlic, about 1/2 tsp of salt and omitted the salsa. I made the first burger and it fell apart in the pan so I added an additional egg to the mix and the rest came out beautifully.

Nacho Cheese Sauce

If you want to make it gluten free use 2 TBSP of corn starch instead of flour. I also used 1 cup of shredded cheese instead of processed cheese. Good basic cheese recipe

Buttermilk Syrup

This is incredible! I did not have corn syrup so I just omitted it. I also used powdered buttermilk instead of regular buttermilk. Even with these changes it was fine!

Shepherd's Pie VI

This was really good. I did think the direction to mash the carrots was odd... (Direction #2) I did not do that. Instead I just boiled the carrots until they were soft and added them to meat mixture. I also added a can of corn and a can of french-cut green beans. Since I added so many extra veggies to the dish I doubled the ketchup and added 1 whole cup of broth so that there would be more liquid. I also used a 3 quart pan instead of a 2 quart pan so that there would be enough room for everything.

Hamburger Pie

This is a very quick and easy recipe. I used 1/2 pound of lean hamburger and 1/2 pound of lean sausage. I added garlic, diced up a tomato and actually used ketchup instead of tomato soup. (The vinegar in ketchup adds a nice flavor to the dish.)

So easy!!! I almost see no point in writing a review at all. All of the reviews are pretty much the same. They all say this is AWESOME!!! >>>>>>I added a half of cup of coconut to the powdered sugar before I shook it all up. It was a nice addition. I did not shake it in a bag. I had a mixing bowl that has a lid and used that to shake it all together.

Pumpkin Cheesecake II

1. This is an easy recipe to make gluten free. As written, the only ingredient with gluten in it is the graham crackers in the crust. To make the crust gluten free replace graham crackers with 3/4 a cup of almond flour and follow the recipe. >>>>2. I made a very simple caramel glaze to top it with. (3/4 cup of brown sugar, 1/4 cup water, and 1 1/2 tsp vanilla. Stir and bring to a boil. Drizzle over the top before serving. Very delicious!

Simple Syrup

I use this base recipe for everything and it can be adjusted to fit lots of purposes. For margaritas I make this syrup and add lime juice to mix with tequila and triple sec. I add vanilla to this recipe to make syrup for iced coffee. >>>>>>ONE HINT>>>>>> It is easy to make this syrup as thick or as thin as you would llike. If you want it thin follow as written and turn it off after it starts to boil. If you want a thicker syrup just cook it longer lowering the heat a little bit after it starts to boil.

This was pretty good. I really liked the caramel made from brown sugar instead of white. I baked my in the oven in a water bath like other reviewers. I think 60 minutes was just a bit too long. Next time I will check it at 50-55 min.

Taco Seasoning I

For everyone with Celiac that can't eat "modified food starch" this is a wonderful alternative! In fact it is so tasty and cheap that it beats packaged taco seasoning any day. I only made one change after making it a few times - I doubled the amount of cumin. I also make this in large quantities and just store it in a zip-lock bag so that I don't have to mix it up every time I need it.

Spanish Flan

Oh my gosh! This is great! Mine did not come out looking quite as pretty as some of the other pictures but it tastes incredible. When they say that the sugar syrup dries fast it does! Literally in just a few seconds so follow the advice of others and put the pan in the oven for a few minutes so it is warm and the syrup will spread better.
