I have Celiac Disease so cook gluten free. I also recently gave up sugar and went vegetarian. (Cooking has gotten fun!!! No sugar, flour or meat...)

Homesteader Cornbread
I made this gluten free by using 1 cup rice flour, 3/4 cup potato starch flour, 1/4 cup tapioca starch instead of the 2 cups of normal flour. (All other ingredients the same.) Worked like a charm. This bread was GREAT! Everyone went back for seconds on the bread. Next time I will double the salt.

Layered Mint Chocolate Fudge
I was surprised it did not require the use of a double boiler. It was hard to get the temperature right to melt the chocolate and not burn it then it cooled so soft that you could not really pour it. (I'm talking about it literally taking about 10 to 15 seconds to cool enough to not be workable.) The perfectionist in me hated that I could not regulate the temperature enough to actually pour it and get a smooth layer... It looked so sloppy. The flavor was so-so. There are better recipes out there.

Flourless Chocolate Brownies
This is a great gluten free brownie! (Might be my new favorite.) Rather than tasting like the various gluten free flours it tastes nutty. I substituted brown sugar for white sugar and used coconut extract instead of vanilla extract. Incredible.
