Cucumber Lemonade

Reviewed: Sep. 5, 2009
This is recipe is really good. Highly recommend letting it sit for a few hours before drinking so you get the flavor of the cucumber.

Dill Cucumber Dip

Reviewed: Aug. 27, 2009
This is a great recipe and a great way to use up all those cucumbers from the garden. I did think the recipe was bland. I doubled the dill and also added a teaspoon of cajun seasoning (thanks whoever suggested that)..it made it so much better...just a slight kick and everyone in our cooking club really enjoyed it. Will make it again. Great served with crackers.

Summer Squash Casserole with Nuts

Reviewed: Aug. 27, 2009
This recipe is okay but bland. I'm giving it 4 stars because I think with some herbs, it could be much more tasty. I would try adding some fresh basil to this recipe...maybe more pepper. I did modify it a little, I used almonds instead of pecans which I thought was great. I also used crumbled crackers as a topper which added flavor. Overall a 4 star but will spice it up next time I make it.

I made this recipe as is and I thought it was great! I made it for a cooking club and it was a great hit. Nice change from the typical cucumber salad.

White Bean Dip with Pine Nuts

Reviewed: Aug. 27, 2009
This recipe is very good. I think it would benefit from more garlic, as the previous reviewer mentioned. I used dry oregano instead of fresh and a regular tomato and it turned out fine. Great on pita bread but would also make a good spread on a sandwich.

Overnight French Toast II

Reviewed: Jul. 4, 2009
I have made this several times and it's always a huge hit and I always get asked for the recipe. I do not use corn syrup (because I don't want to buy it) and just use syrup in it's place....very good. I add a teaspoon of cinnamon. You don't even need additional syrup when eating. Update: I have made this countless number of times, including for cooking club. It is ALWAYS a huge hit and I constantly get asked for the recipe. Challah bread makes this dish AMAZING! I couldn't find any French bread at the grocery store so the baker suggested this. He told me to double the egg and milk mixture though since it soaks up a lot more liquid than regular French bread. I decided to multiply the egg and milk mixture by about 1.5 and it was perfect! I still make this with regular bread but the challah bread is so much better. I have actually made this recipe (just for my husband and I) with hoagies that had been in the freezer too long and it was still great. A continued favorite!

Asparagus and Goat Cheese Quesadillas

Reviewed: Jun. 8, 2009
These are fantastic. I was concerned about the combination of asparagus and cilantro but WOW was it good. I made these with corn tortillas and it was still really good although I think flour would be better. Highly recommended and of course so easy to prepare!

Hawaiian Dessert

Reviewed: Jun. 8, 2009
Good recipe. I do not frequently make dessert and forgot to purchase the eggs for the cake mix. They are not listed on the recipe list so make sure you add them (as well as whatever else is called for in the cake mix). I think the dessert would be great frozen. It states to chill a minimum of 2 hours, I would chill overnight minimum! We ate this after 2 hours and we all thought it was much better the next day. Overall, would suggest this recipe...makes a lot for the price!

Cranberry Spinach Salad

Reviewed: Feb. 28, 2009
Fantastic recipe! I have used walnuts in place of the pecans and they taste just as good. I use a little more spinach than what is called for because this makes a lot of dressing. Great taste! Thanks for the recipe!

Swiss Potato Pancake

Reviewed: Feb. 28, 2009
I had leftover Gruyere cheese so I tried this recipe. I found it very difficult to flip (even with the plate trick)...it ended up falling apart. So, it ended up as hash browns with cheese instead of a pancake. The taste was great though.

Black-Eyed Peas and Tortillas

Reviewed: Feb. 28, 2009
My mom used to make a recipe similar to this one. I made a few changes to this one (some from previous suggestions). I didn't add any stock and used green chilies instead of jalapeno peppers (but would be good with them too), used 2 cloves of garlic, 1 can of diced tomatoes and some oregano and basil. I also added more lime juice. Thanks so much for the recipe!

Apricot Lentil Soup

Reviewed: Feb. 28, 2009
I made this recipe because I had dried apricots that I wanted to use up. I wasn't expecting this soup to be so outstanding! I followed the recipe but used green lentils instead of red just because I couldn't find them. I will make this again! Thanks for the recipe!
