Made this recipe into muffins for a class I teach and they were a huge hit. I did half and half all-purpose to whole wheat flour and replaced 1/2 of the oil with unsweetened applesauce. Didn't have pumpkin pie spice but used a recipe on here to make my own (since I had all the spices separately). Also added some extra cinnamon; I think 1 teaspoon. Fantastic!

Tex-Mex Squash Bake

Great recipe for using up garden zucchini! I made a few adjustments - added 2 jalapeno peppers, used less olive oil and a lot more cumin. Otherwise followed recipe. Will make again but next time, I probably won't put it in the oven since I think it is great just as a stir fry. Great with diced tomatoes and lots of fresh cilantro on top.

Spiced Parsnip Soup

Good, I used broth in place of the boullion and water. I also didn't add the heavy cream and I thought it was great without the added calories. I had to spice it up with some cumin and white pepper to improve the flavor though.

Pumpkin Turkey Chili

Great base recipe but I added a lot to this. Cumin, apple cider (the alcohol kind), honey (I found it very bitter), an extra can of tomatoes (I also used fresh). I used black beans instead of turkey. Really good with changes. Will make again.

Cheesy Chicken Poblano Chowder

This is fantastic soup. Every pepper will vary on how hot it is (even coming from the same plant...I used the poblano's from my garden and they were very different) so you will need to taste them before adding. I added 3, but next time will add more, depending on how how hot they are. An easier way to get the skin off the peppers is to blacken them by putting them directly in a flame on a gas oven or a grill, then follow the directions by putting them in a plastic bag. Much easier and less chance of burning them (which I have done). Just use a long BBQ type of utensil so you don't burn yourself. I otherwise made exactly as is except left out the chicken...no need for it in my opinion with the beans and cheese. Next time, I will add an extra can of beans and maybe another pepper or two. Thanks so much for the recipe!!!! Fantastic!

My mom makes something very similar to this. The only thing I altered, is adding just a couple tablespoons of canola oil, that is the way my mom makes it. Great recipe to use up cucumbers and peppers from the garden. Thanks!

Zippy Chicken Corn Chowder

My husband and I both thought this recipe was really bland. I made it as stated and ended up adding about 1 1/2 teaspoons of pepper, 1/4 teaspoon of cayenne pepper, 1 teaspoon of chili powder and 1/2 teaspoon cumin. It's still not that great. I agree with other users that there is too much chicken and it would be much better shredded instead of in chunks. Won't make again.

Spiced Red Cabbage

My husband and I both really enjoyed this recipe. We got red cabbage in our CSA box and had no idea what to do with it. This ended up being a great option! I made as written and used tarragon instead of red wine vinegar. We ended up adding sliced almonds to it at the end to give it some texture. Will make again if red cabbage ever appears in our box again. Thanks for the recipe.

Kale, Swiss Chard, Chicken, and Feta Salad

Great recipe but way too much vinegar. I will cut in half next time. I had to add sugar to each bowl of my salad in order to get this down - way too much vinegar for me but I liked the recipe otherwise. My husband, on the other hand, loved this recipe and ended up eating majority of it!

Sauteed Swiss Chard with Parmesan Cheese

Fantastic recipe. Red wine vinegar is great instead of the wine and lemon juice. But the recipe is also great as is. I have used the basic ingredients for this recipe with beets and beet greens and it is fantastic. I sautee the beets for a long time and then add the greens at the end. Yummy! Thanks for the great recipe!

Velvety Pumpkin Soup With Blue Cheese and Bacon

Gluten Free Ginger-Honey Crunch

Fantastic and super easy! I made this pretty much as is but with unsweetened cranberries, less almonds and a little more coconut. I added the cranberries with everything else and it worked out fine. I used 1 teaspoon of ginger and 1/2 teaspoons of cardamom. Very tasty. Thanks for the recipe!
