Cream Puffs

Reviewed: May 15, 2013
I usually read reviews before i make a recipe on here, but this time I just followed the recipe exactly, and they came out PERFECT! I baked mine for about 22 minutes on the top rack and they were perfect. No soggy shells here. I put the filling in a ziplock bag and snipped a corner off, then delicately cut the tops off my shells, the insides are soft enough to just squeeze the filling right in, replace the tops and I drizzle some melted cocolate on top. As far as adding the eggs, i took the batter from the pot to a separate bowl like it said, I used a wooden spoon like it suggested, and I added one egg at a time. At 1st it makes the batter act strange and separate, but keep mixing, it gets a little drier and elastic like. I did not wait for anything to cool before adding my eggs, and they did not cook like some said happened to them. My family loved them!!!

Baked Pork Chops I

Reviewed: Feb. 25, 2013
I followed the recipe exactly and it came out great! We loved it! I used Wente Chardonnay. I thought the pork would come out dry after cooking that long, but it was very tender. The sauce also was a nice surprise how good it was (and simple to make). Will make again.

Asian Beef with Snow Peas

Reviewed: Feb. 5, 2013
Made this last night and between me, my hubby and 12 year old son we ate it all! Pretty much followed exact recipe. Only I doubled the sauce (suggested by another user) which was perfect cause we like it more saucey then dry. And I added some other veggies like red pepper slices, and Zucchini, along with snow peas and that was awesome! We served over brown rice and it was amazingly good! Only other thing is to really be carefull to not overcook meat...it cooks fast, ours came out a little overdone so we will adjust next time..this one is going into our rotation!

Spinach Tomato Tortellini

Reviewed: Jan. 28, 2013
I made this last night and the whole family really liked it. I pretty much followed the recipe except I bought 2 bunches of spinach and used almost all of the 2 bunches. I also punded out a couple chix breasts, dipped in flour, egg then italian bread crumbs and fried them up in some olive oil, cut into pieces and kept warm in oven till I finished the pasta dish so I can add them in. Since I was adding in the chicken and a 20oz. bag of tortillini vs. the 16 in recipe I ended up doubling the sauce. I could not find diced tomatoes w/garlic AND onion, but I found a can of diced tomatoes with just garlic and one with just onion...so since I was doubling the sauce i just bought one of each. Good think I doubled sauce...it was the perfect amount for the extra tortilli and chicken I added...will be making this again!

Whole Wheat Blueberry Pancakes

Reviewed: Jan. 5, 2013
We really liked these...no more boxed mixes and frozen blueberries for us! I did add about 1/8 cup more milk and I used real sugar because we don't go for the "sweeteners"....My 12 year old loved them as did my husband and I. We did not even have to add butter, we just used a little vermont maple syrup

Southern Peach Cobbler

Reviewed: Aug. 2, 2012
Followed recipe exactly and it came out great! LOVED it. Not sure why people say they need to make 50% more of the topping unless they are using wrong size baking dish. It calls for 2 quart and I only had 2.5 quart and it was fine. I also only had 6 peaches vs. the 8 the recipe called for and that was fine too. will make again and again!

Alyson's Broccoli Salad

Reviewed: Apr. 9, 2012
Made it for Easter... cut Broccoli (small pieces), onions and red grapes (i used 1 cup halved red grapes over raisins as others suggested and it was perfect) and combines them the night before. I also combined in a seperate bowl the white wine vinegar/sugar/and mayo and set that in fridge overnight. The next day right before I served I combined the veggies and dressing(which tastes a lot like slaw dressing), and the slivered almonds instead of sunflower seeds. I cooked bacon and crumbled it and set it on the side for people to add if they wanted, but I thought it was very good w/o it...will be making this again and again!!!!

Chicken Piccata II

Reviewed: Apr. 3, 2012
This was pretty good...I followed a few tips from others...we pounded chicken and dipped 1st in flour then egg then flour. Browned the chicken(which pretty much cooked chicken all the way), then put in some 9x13 pans and kept warm in oven while making sauce. We tried to double sauce but then got confused as to if we should add more butter since we were done browning. The butter kinda goes away as well, so we did add some more butter and as others suggested add a 1/2 tsp. of sugar. Since we doubled we added 4 tbls. of lemon juice, but i think next time i will cut back to 3 when doubling. The sauce was good, just had an initial tang to it, but it actually grew on me. Also next time instead of sugar I might try adding wine to see the taste difference.

Lamingtons

Reviewed: Feb. 29, 2012
I am from N.E. Ohio and had no idea that these were original to Australia! I grew up with these in our bakeries and we just called them coconut bars. The overall taste is the same. I followed recipe and i also followed one comment that said to leave the cake out over night and I think that was a bad idea. It was too dry. I also think next time I would bake in oven for 25 minutes, not 30. The other tip is for the chocolate icing, I melted butter and milk and kept it over heat while I added the cocoa powder and con. sugar...was easier to reheat it when I needed too cauuse the icing tends to cool down quick and thicken and you need it thinner and fluidy....

Dobos Torte

Reviewed: Apr. 9, 2011
I made this for my father-in-law who used to make a dobos torte. I followed this cake recipe to a "T" and it came out perfect. I used 9" pans that are just flat disks my in-law had made years ago. I put parchment paper on it before I poured batter. WOrked like a charm, when I took out of oven I flipped it onto a cookie sheet lined with more parchment paper and then you peel of paper and let cool...Cake tasted great and father-in-law LOVED it and said it was perfect! I did use a different chocolate buttercream frosting though...Oh, and I found if you use 1 1/4 dry measure cups of batter, you will get 6 cakes exactly. This recipe is SO easy too!
