About this Cook
Computer programmer/systems administrator since 1978. Between computing jobs, have cooked for a catering company and for a Wolgang Puck's Cafe restaurant. After 9/11, when everything came to a halt, I became a missionary, and am helping other missionaries with their computers in Honduras, and am installing shortwave radios in clinics that are outside of telephone and cellphone service areas. Still do lots of gourmet/international cooking, and am considering selling some of my products to help offset some of my living expenses.
My favorite things to cook
Candy: Creamy Caramels, Chinese: General Tso's Chicken, Cookies: Snickerdoodles, Cuban: Lechón Asado Dessert: White Chocolate Banana Cream Pie, German: Sauerbraten, Greek: Gyros, Honduran: Pastelitos (chicken or beef meat pies), Hungarian: Chicken Paprikas, Indian: Chicken Vindaloo, Italian: Tuscan Summer Pasta, Jamaican: Jerk Chicken, Korean: Beef Bulgogi, Mexican: Turkey Mole, Moroccan: Kefta Tagine (lamb meatball stew), Polish: Pierogies, Russian: Beef Stroganoff, Thai: Chicken Pad Thai
My favorite family cooking traditions
Both of my parents like to cook, and all four grandparents liked to cook. Although the women would do most of the everyday cooking and the men would do most of the gourmet cooking, these roles were not cast in stone, but were very flexible.

Leftover Chicken Croquettes
Have made these a number of times and they are always good. Each time, I vary it according to what's on hand and what I feel like adding. Just tonight, I mashed a cooked potato into it, used panko instead of seasoned bread crumbs, added Parmesan, Sriracha and Worcestershire sauce and left out the salt and pepper. Delicious!

Grilled Gyro Burgers
Sorry. These should be called "Yogurt-Ranch Burgers," since they have little to do with actual gyros. If you want to make a burger that will be like a gyro, use ground lamb mixed with onion, garlic, salt, marjoram, rosemary, and pepper.

Dog Biscuits II
Don't have any dogs at the moment, but made these for some friends. One of them, who has an Italian Greyhound, sent me the following email: "You have literally created a cookie monster........she is crying constantly for what will i do?????" Sounds like a five-star rating to me!
