Luscious Spinach Artichoke Dip

Two enthusiastic yums up! I made with lite mayo and fat free sour cream and added a little more crushed garlic. I made it as an appetizer at a dinner party. The bowl was scraped clean. Delish!

Slow Cooker Spicy Black-Eyed Peas

Yum! The only change I made to the recipe was that I added a couple of cups of chopped kale. I must admit that I've never really had black-eyed peas, but my friends have and said they were delicious. I must add that I rarely ever make only one change to a recipe. Definitely a keeper!

Beth's Spicy Oatmeal Raisin Cookies

Awesome! While a self-proclaimed Cookie Monster, I'm not a big fan oatmeal cookies, I sampled one to make sure they were edible. They were so edible that I had 2 more. :O) I followed the recipe to the letter EXCEPT I had substituted pumpkin spice for the ground cloves since I didn't have any of those on hand.

American Lasagna

Doubled the cheese portion for an even creamier dish. I overheard my neighbor kid proclaiming to his friend, "Dawg, that lasagna was the Ba-ZOMB. I tore the plate UP!" In adult-speak that means "It's good and I ate until the plate was clean!"

Down Home Macaroni and Cheese

It's definitely rich and creamy! If it's too creamy for your tastes, thin it out with some milk. Mac and Cheese is one of my favorites of all time. Only a special recipe would get 5 stars outta me!!

Roasted Garlic Mashed Potatoes

Oh man! I KNEW I had forgotten something! I was making this from memory for Thanksgiving Dinner and forgot the Parm! It was still great without it. I also added a couple dashes of Mrs. Dash's Garlic. Added a really nice flavor.

Chinese Spicy Hot And Sour Soup

Yum! The first time i made this, I didn't have any red wine vinegar, so i used white vinegar and about a 1/4 of red wine - it was only alright. The second time, it was delicious! I used regular wild mushrooms, diced up a leftover pork chop and an extra egg. I followed the recipe as written and then added a couple of tablespoons of lemon juice, a little bit of red wine, (because I liked the flavor it added the first time). So good! It would've been just as good had I just followed the directions exactly. Yum!

Crushed Pineapple Sour Cream Pie

I figured out what might cause the runniness of the filling!!! I don't know if anyone else has ever noticed, but if you stir and handle sour cream too much, it breaks down and becomes runny. I mixed the sugar, pineapple and pudding mix on low speed for 2 minutes. Then I folded in the sour cream with a spatula until it was evenly mixed. Wah-la! Firm and tasty pie filling. I used lite sour cream, a shortbread pie crust and garnished it with sliced strawberries and whipped cream... and boy was it tasty!!!! My friend's husband went back for thirds!

Best Spinach Dip Ever

YUMMY! I have been making this recipe for years. It is one of the easiest and best tasting recipes I have gotten off of this site. And probably the only recipe I have never added or subtracted anything from the directions. It is truly "the best spinach dip ever!"

Cheesy Potato Casserole

I LOVE these potatoes. My mom has been making these "heart attack on a plate" potatoes for years sans the onion and bacon bits. To cut down on the fat, use light mayo and light velveeta cheese. Still has the same great taste, but half the fat!!!!! Always a favorite at any kind of potluck dinner!

Overnight Blueberry French Toast

What a yummy dish! My family is not big on blueberries, so I kept them out of the recipe. Instead of the blueberry sauce, I added a streusal topping and brought out the maple syrup. Excellent dish to bring to a carry-in at work. Got many requests for the recipe. It disappeared within minutes!

Blueberry French Toast

Quick and easy recipe to throw together for a quick and yummy breakfast for the family or overnight guests!!! I made this without the blueberries per they weren't in season. Served it with a choice of sliced strawberries and powdered sugar or maple syrup. It was quite delish.

Chocolate Peanut Butter Wacky Cake

I had a small gathering which the neighbor kids helped me prepare for. The 12 year-old girl made the cake and it was delicious. We decided to get REALLY wacky and added chocolate and peanut butter morsels to the cake and the peanut butter topping. We also threw in some marshmallows and toffe bits. It was delish!

Garlic Chicken

Delicious and quick and easy to make for a spur of the moment dinner guests. Also a good recipe for we single folks to make. Easy cut the recipe for only one or two chicken breasts. Left over chicken tastes great on top of a salad the next day!

Caramel Apple Pie II

YUMMY! I had never made a pie before, so I was very nervous about the outcome. But my neighbor kids didn't even come up for air as they gobbled it down. I brought the leftovers into work the next day and got rave reviews. It tastes good cold, and scrumdiddlylicious warm!

Puppy Chow

Cute story to tell... I had a gathering and offered some Puppy Chow to 4 yr-old Anthony. He asked what was in it. I told him it was Chex cereal that had melted chocolate and peanut butter poured on it. Then it was tossed in powdered sugar. He says "Oh no... I couldn't possibly eat that." Thinking he was allergic to something I kind of freaked and asked why not. He put his little hand to his chest, took a step backwards and said "Because it sounds too delicious." FOUR YEARS OLD! Needless to say, I had to give the kid a hug. Anthony proceeded to gobble it up and even took a doggy bag (which he thought was hilarious) home for his brother.
