Chinese Spicy Hot And Sour Soup

Yum! The first time i made this, I didn't have any red wine vinegar, so i used white vinegar and about a 1/4 of red wine - it was only alright. The second time, it was delicious! I used regular wild mushrooms, diced up a leftover pork chop and an extra egg. I followed the recipe as written and then added a couple of tablespoons of lemon juice, a little bit of red wine, (because I liked the flavor it added the first time). So good! It would've been just as good had I just followed the directions exactly. Yum!

Slow Cooker Spicy Black-Eyed Peas

Yum! The only change I made to the recipe was that I added a couple of cups of chopped kale. I must admit that I've never really had black-eyed peas, but my friends have and said they were delicious. I must add that I rarely ever make only one change to a recipe. Definitely a keeper!

Beth's Spicy Oatmeal Raisin Cookies

Awesome! While a self-proclaimed Cookie Monster, I'm not a big fan oatmeal cookies, I sampled one to make sure they were edible. They were so edible that I had 2 more. :O) I followed the recipe to the letter EXCEPT I had substituted pumpkin spice for the ground cloves since I didn't have any of those on hand.

Sweet and Spicy Soup with Black-Eyed Peas and Sweet Potato

I really don't like being a negative Nelly, but I didn't care for this recipe at all. :O( I followed the recipe as written, so it may just be that I don't like my soups to be sweet. I ended up draining the veggies and freezing them to do something with at a later time.

Darra's Famous Tuna Waldorf Salad Sandwich Filling

People ALWAYS ask me for this recipe. To make it more Weight Watcher-friendly, I usually use half the mayo the recipe calls for and use 1 point wheat pocket pitas instead of the croissants. I also omit the celery because I am allergic to the taste of it. I've also used shredded chicken in lieu of the tuna. This one is ALWAYS a big hit at potlucks.

Raw Veggie Picnic Salad

YUM!!! Suggested a friend make this for a picnic. The entire batch was gobbled up! Instead of using the both types of onions, she only used the green onions. I am going to try a lighter version using lowfat or fatfree mayo, Splenda instead of Sugar, and turkey bacon. I will post with the results.

Tomato Brie Bow Tie Pasta

I found this to be rather blah. It's great in theory, but just blah in taste. I do like the idea of adding the Brie to my regular tomato sauce for a different flavor. Next time I will melt the brie in the microwave before adding to the sauce... the heat was too high and it curdled.

Cream Cheese Bars II

These are more addictive than good. Don't get me wrong.. they are good.. but I have found I can't eat just one. I forgot the recipe at work and made the cream cheese mixture with 2 tablespoons of butter instead of the egg (oops). I also used 3/4 cup of sugar. I felt it was missing a little something and added a couple of drops of almond extract. Everyone at work really liked them. Next time I may garnish the bars with some powered sugar and/or fruit.

Feta Cheese Turkey Burgers

Burgers were still a little bland. They seemed to be missing something. I don't like olives, so maybe eliminating those from the recipe changed the flavor drastically.

Red Wine Flavored Beef

I was cooking for 2, so I found some shoulder flanks (very lean pieces of meat), about 8 slices and two pounds worth - and turned this into a 5 star recipe. I marinated them overnight in a cup of red wine and 2 tablespoons of garlic. Once I put it into the crockpot and added another cup of wine and two cans of beef broth and the onion soup mix. I removed some meat, put it on hoagie buns with some light swiss cheese and baked it long enough to melt the cheese. We then used the broth to dip the sandwiches into and to pour onto some mashed potatoes.

American Lasagna

Doubled the cheese portion for an even creamier dish. I overheard my neighbor kid proclaiming to his friend, "Dawg, that lasagna was the Ba-ZOMB. I tore the plate UP!" In adult-speak that means "It's good and I ate until the plate was clean!"

Laura's Dip

I make a very similar recipe that I would consider a 5 star recipe... however... I use cottage cheese, cream cheese (1/2 a brick, I believe - I'll double check)and bleu cheese - no sour cream. I throw all 3 ingredients into the food processor and blend and then add finely chopped pecans or walnuts. I serve it with crackers and thin slices of granny smith apples (soaked in lemon water to prevent browning). A friend that loves the recipe has dubbed it as "Cheese Goo".

Down Home Macaroni and Cheese

It's definitely rich and creamy! If it's too creamy for your tastes, thin it out with some milk. Mac and Cheese is one of my favorites of all time. Only a special recipe would get 5 stars outta me!!

Warm Crab Parmesan Dip

Delicious! This was a GREAT recipe. The only thing I altered in this recipe is that I used some fresh imitation crab (as one of my guests is allergic to shell fish). It was a HUGE hit at my dinner party. I used Just 2 Good mayo and light cream cheese and sour cream and it was still very rich in flavor. You couldn't tell that I had skimped on some fat grams! I used my veggie chopper to chop the crab and saved some major time.

Roasted Garlic Mashed Potatoes

Oh man! I KNEW I had forgotten something! I was making this from memory for Thanksgiving Dinner and forgot the Parm! It was still great without it. I also added a couple dashes of Mrs. Dash's Garlic. Added a really nice flavor.

Creamy Hot Chocolate

Yummy! Made this for dessert one evening at a dinner party... it was delish. If anything, it was a little too rich... I added about a cup of milk to the recipe to balance the chocolate flavor. It was da bomb!

Puppy Chow

Cute story to tell... I had a gathering and offered some Puppy Chow to 4 yr-old Anthony. He asked what was in it. I told him it was Chex cereal that had melted chocolate and peanut butter poured on it. Then it was tossed in powdered sugar. He says "Oh no... I couldn't possibly eat that." Thinking he was allergic to something I kind of freaked and asked why not. He put his little hand to his chest, took a step backwards and said "Because it sounds too delicious." FOUR YEARS OLD! Needless to say, I had to give the kid a hug. Anthony proceeded to gobble it up and even took a doggy bag (which he thought was hilarious) home for his brother.
