Chicken With Mushrooms

Quick and tasty! I added garlic to the skillet and cheated by using presliced baby bella mushrooms. Also increased the amount of mushrooms because we love them!

Bundle of Veggies

This was a great base recipe to start from. I picked almost a completely different selection of vegetables and seasonings but stuck to the same ratio of vegetables to spices. Made it in advance of my camping trip except didn't add the olive oil until right before I put it on the grill. I also bought a foil pan to cook it in at the dollar store so I could just dispose of it after without cleaning it up.

Cheesy Campfire Potatoes

Made this for a campout I just returned from. They went over sooo well! I made it at home and stuck it in the cooler. I also used a foil pan I purchased at the dollar store so I didn't have any cleanup.

Happy Roast Chicken

While it was very tasty, I think the recipe should state a cooking time of at least 1-1/2 hours. It took us 2 hours to get a 3.8 lb bird cooked because we took it out after 1 hr and had to put it back in. After another 30 minutes it still wasn't done. I'll either increase the temp or the cooking time next time.

Slow Cooker Pulled Pork

Great recipe, very easy and flavorful. I followed some tips from other reviewers. I got a shoulder cut instead of pricey tenderloin. Salted and peppered it before adding root beer. Also cut slits and pushed 10 garlic cloves in a 2.7 lb cut of pork. Started it fat side up, then halfway through I turned it over. Salted and peppered the other side. After 6.5 hours on low, I took it out and shredded it (it was so tender), drained the crock pot, added the shredded meat and bottle of bbq sauce back in the crock pot. Let it cook another half hour. It was so tasty. The second day the root beer flavor came out even more. I will definitely make this again!

Plum-Glazed Cornish Game Hens

I did the recipe exactly as printed and will probably double the jam next time. It was good, but the hot of the pepper flakes competed too much with the sweet of the jam. The juices made a great gravy with a little corn starch and chicken broth (we had on hand from making risotto). As other reviewers said, it was fall of the bone tender! Will definitely make again!

Spinach Enchiladas

Good recipe with some adjustments. I subbed fresh spinach for frozen and added a bell pepper to the skillet with the garlic (twice the garlic) and green onion. Even with adding the Cumin, Parsley, Cayenne Pepper and Chili Powder that another reviewer recommended, it was missing something. A lot of flavor but I think next time I'll be more liberal with the spices and use the Hot Enchilada Sauce instead of Mild. Great start though :)

Spiced Pot Roast

This recipe was excellent! Followed the instructions to a tee. Added a little red cayenne pepper to the flour mixture. After the baking was done, took the roast out of the dutch oven, put it on the stove at medium-high heat and added corn starch to make gravy. The flavors in this dish knocked my socks off!!

Great recipe! I subbed salsa for diced tomatoes and added a yellow bell pepper to the skillet with the ground beef and onion. This smelled so good after everything was combined in the skillet that I had a hard time not eating it right then instead of baking it, lol!

Homesteader Cornbread

VERY EASY! I kept telling my boyfriend "this seems deceptively easy" when I was mixing it together but I was pleasantly surprised when I got a gorgeous golden loaf of cornbread at the end! I think this recipe is a great base to start from and could easily be tweeked to individual tastes.

Apple Butter Pork Loin

I'm giving 4 instead of 5 stars because I ended up following the instructions of another reviewer who indicated that some of the recipe (previously from Southern Living) was missing from the instructions. I followed those instructions and had great results, although I think it could've been less cooked, perhaps 145 degrees instead of 160.

Rosemary-Roasted Chicken and Potatoes

Easy and very flavorful! I was surprised how easy it was to separate the skin from the chicken without tearing it. I'm a novice cook, so if that part is giving you pause, don't! go for it! Putting the mixture under the skin lets it really permeate the meat while it's cooking. So good!
