Sun-Dried Tomato Basil Orzo

Made tonight...awesome. But also used as a base. I did not add olive oil but simply used the rest of the flavored oil in the sun dried tomato jar. I also squeezed half a lemon on top, and added a LOT more herbs from my own garden (basil, oregano, parsley), plenty of pepper and then i also cut up some fresh baby spinach. Salt/pepper to taste and voila! Know it will be even better tomorrow morning for hubbie's lunch through the week :)

Black Bean and Corn Salad II

great! went with suggestion to add more lime juice (3 fresh limes) in lieu of extra olive oil. Also did not have green onion and substituted 1/2 of a red onion. I also used "mexicorn" and "chipotle" corn from green gial for extra kick, and a pack of Sazon. did not have cayenne, used crushed red pepper. Came out great!!!

Ham and Bean Soup

Great - hubby loved it. Made some key modifications-added one whole can 15oz can seasoned diced tomatoes, splash of cooking wine and one whole packet of sazon spanish seasoning. did 1 can cannellini beans, one can black beans. awesome!

Candied Carrots

Great! I steamed pre sliced carrot chips to retain nutrients. I think created the glaze in a separate pot, added some honey and mixed with steamed carrots. Delicious!

Fragrant Chicken Curry

Awesome---used pre cooked rotisserie chicken from Sam's club. Thought recipe lacked more spice and aimed for spicy/sweet...so on top of the yellow curry, I added some Thai red curry (taste of thai supermarket brand) and splenda. Awesome!

Pesto Pasta

Easy to make and very good. I did my own modification which came out beautifully-I added feta as suggested, and black olives. But also added in sun dried tomatoes with a little of the olive oil the come in. I used knorrs basic pesto (not the creamy) as my base. A little salt/pepper, italian seasoning and voila!

Awesome..hard to taste the feta though..may want to use the flavored kind..had to beef it up a lot by adding melted butter, lotsa lotsa pepper and chives.

Too Much Chocolate Cake

Awesome - Valentine's day hit. I also slightly cut calories using Pillsbury's reduced sugar Devil's Food Cake mix with Splenda and light sour cream (by friendship). I flanked with fresh raspberries and whipped cream. Cake=very happy boyfriend! Thanks! I think next I will try with the mini chocolate chips.

Balsamic-Glazed Salmon Fillets

Delicious! However, I modified this recipe as I didn't have dijon mustard or white wine. I substituted the white wine for grand marnier, and I also sprinkled the fish with brown sugar, put a little on bottom to carmelize and crust up, as well as added salmon seasoning! Delicious!
