Loved this recipe! I added ricotta cheese, about a half cup. It was so creamy and delicious. This is my new go to for baked ziti. I also subbed thyme for rosemary.

Hot Sausage Casserole

Reviewed: May 16, 2013
This was so easy and yummy! I made a few modifications because of what I had on hand. I had about 2-1/2 cups cooked rice, so I browned the meat and added the meat and rice to a baking dish. Then sauteed red bell peppers, onions, celery, and mushrooms. Cooked about 5 minutes then added all that to the pan too. I had 2 cans of cream of chicken soup so I added that and on can of cream of onion. I omitted the water because the rice was cooked. Then mixed everything and baked it for about an hour. Will make this again! So easy and yummy

This is a great recipe if your looking for a quick dinner. I only had 16oz if meatballs and used 1 can of cream of celery and french onion soup, then about 1/2-3/4 cup of sour cream. I also added 1/2 cup of water to thin it out a little.

Quick Sesame Green Beans

Reviewed: Oct. 22, 2012
This was very good and simple. I didn't have the miso paste, so I just left it out but plan on making it again with it. I also used ginger paste, because its what I had. I used about 1/2 teaspoon. I added a tablespoon of sesame oil to the mixture too. Very good! Thanks for sharing.

Spicy Chicken Thai Soup

Reviewed: Aug. 11, 2012
This recipe was delicious. There is something missing from the recipe, in step #5 it says to add the lime juice, but nowhere in the ingredients is lime juice listed other then the limes for garnishment. I used 2 tablespoons because I found another thai recipe similiar to this one and that's what it called for. Other then that, I followed this recipe to a T, and it was wonderful. Although, next time I would like a little more heat and will use serrano peppers instead of jalapenos. Also, this is a light soup recipe, and if your looking to make it more hearty try using basmati rice or glass noodle with it. They are both great. Thanks for sharing, will be using this often.

Tortas de Camaron

Reviewed: Aug. 3, 2012
Just a quick tip, after stem and seeds are removed from ancho chiles place them into a bowl of hot water, cover and let set until chiles are soft. About 5 minutes. Then add them to the blender using the water the chiles were in. Also if you roast the chiles before doing anything to them it can add great flavor. Enjoy!

I made this a while ago and it was very good, I thought it would be too sweet but, it came out to be the perfect balance of sweet and spicy. I used some of the garlic chile paste that I had leftover. Served with the white mexican rice recipe from gema, on this site. Thanks for sharing Ken!

Chicken Milanese

Reviewed: Jun. 15, 2012
This recipe is so simple and is great to add to the top of any pasta. One of my favorites is the mexican pesto recipe from here (kenfromca), tossed on some fettucini noodles and topped with parmesan or cojita cheese. Also made it with a tomato, buttered pasta w/lemon. Experiment, it's hard to go wrong with this chicken.
