Delicious Chicken Casserole

LOVED this dish! Even though I tweaked the original recipe a bit to satisfy our tastes, that is exactly why I still gave it 5 stars! It is such a great base recipe on its own, but can easily be changed to suit the cook. Here are some of my minor changes: Instead of 2 cans of cream of chicken soup, I used 1 can of that and 1 can of cream of mushroom to keep it from being overpowered by the chicken soup taste. Worked great! I added about 1/2 cup of shredded cheddar cheese and one can of chopped green chilis to the mixture before putting the cracker/butter mixture on top to bake - again, small change, but super yummy! I could see adding more veggies as an option, too: sliced carrots, peas or even broccoli would be delish! This is a great new dish to put in any busy familiy's dinner rotation - we loved it!

Roasted Brussels Sprouts

OMG - why have I not eaten brussel sprouts before? These were wonderful! We halved all the sprouts after cutting off the ends and added butter and a little lemon for tang. The "charred" sprouts were so very yummy and tasty. One dinner guest who has been eating sprouts his whole life said these were the best he'd ever eaten! We are so excited to have another veggie in our rotation! To help cut down on smell when cooking, set out 1 cup of fresh white vinegar on counter before putting these in oven. My mom has done this for years with stinky veggies (cabbage/broccoli, etc). and it really works!

EAGLE BRAND® Peanut Butter Fudge

Totally delish, super rich and extremely easy to make. After following another reviewer's idea, I substituted 1- 12 oz. bag of white choc. chips in place of the candy bark. Made things even easier. Will definitely make this one again for the holidays!

Pat's Baked Beans

Hubby and I had my parents over last night for burgers, beans and a movie. Very causal. I made these beans based on the reviews and made them just as recipe was stated (but used butter beans in place of garbanzos). WOW! The flavors were complex, not too sweet, and had a great balance. I loved the change of having a different texture by using different kinds of beans. My Dad went back for 3 helpings, hubby had two and my Mom ate 1 serving and she doesn't even like baked beans. I would definitely make this again and would follow the recipe as I did last night. Super easy but oh, so tasty, too! Thanks for the great recipe!

Curried Coconut Chicken

I can only give this 4 stars because I felt the two types of tomato products (diced/sauce) overpowered the dish. I also thought 3 Tbs. sugar was too much for this recipe. I would have loved to have more of the coconut flavor stand out with the curry instead of so much tomato. This dish was easy to make and prepare. I would deifinitely make it again, but probably leave out the juice of the diced tomatoes and maybe add some unsweetened shredded coconut to the final dish along with additional coconut milk while cooking.

Napa Cabbage Salad

This salad was really good and easy to prepare. Instead of trying to shread the napa cabbage (which was very difficult), I trimmed the ribs and then cut the cabbage into pieces with kitchen shears. Much faster! Also, as I sampled the salad, I kept thinking it was missing something - it needed a kick. So, I threw in a small amout of fresh cilantro leaves and Wow! That was exactly what it needed. Every bit of the salad was devoured by my guests and I had about 8 who insisted I share the recipe with them. Will definitely make again with the addition of the cilantro.

Jalapeno Popper Spread

Made this for our guests at the beach house over the Memorial day holiday. Totally loved it and had to make two more batches throughout the weekend! I added way more chopped jalepenos than called for to make mine spicy and also mixed the panko and cheese into the mixture before putting into the baking dish. I then put more cheese and lots of panko on top and baked at 350 until toasted and bubbly. A new favorite dip for sure!! Everyone could not seem to get enough!

Beer Margarita

Our neighborhood knows this drink as "Hop, Skip and Go Naked!" One night of these drinks at Bunco and the husbands all renamed our fizzy margaritas. They now insist we serve them at Bunco because we all come home really happy! I only use 6 oz. of vodka instead of 8. Pour over ice and serve with lime wedges. Super drink for summer, but be careful! They will sneak up on you!

Buffalo Chicken Dip

Super. Delicious. Could not stop eating. Yummy! These were all things I heard from people who ate this dip I served at a recent party. I used thick crackers and celery as the sides to eat this with and I cannot say enough about how great it was! Even people who don't normally like buffalo chicken or wings seemed to like this. This will be a forever staple in my party rotation!
