Delicious Chicken Casserole
LOVED this dish! Even though I tweaked the original recipe a bit to satisfy our tastes, that is exactly why I still gave it 5 stars! It is such a great base recipe on its own, but can easily be changed to suit the cook. Here are some of my minor changes: Instead of 2 cans of cream of chicken soup, I used 1 can of that and 1 can of cream of mushroom to keep it from being overpowered by the chicken soup taste. Worked great! I added about 1/2 cup of shredded cheddar cheese and one can of chopped green chilis to the mixture before putting the cracker/butter mixture on top to bake - again, small change, but super yummy! I could see adding more veggies as an option, too: sliced carrots, peas or even broccoli would be delish! This is a great new dish to put in any busy familiy's dinner rotation - we loved it!

Roasted Brussels Sprouts
OMG - why have I not eaten brussel sprouts before? These were wonderful! We halved all the sprouts after cutting off the ends and added butter and a little lemon for tang. The "charred" sprouts were so very yummy and tasty. One dinner guest who has been eating sprouts his whole life said these were the best he'd ever eaten! We are so excited to have another veggie in our rotation! To help cut down on smell when cooking, set out 1 cup of fresh white vinegar on counter before putting these in oven. My mom has done this for years with stinky veggies (cabbage/broccoli, etc). and it really works!

EAGLE BRAND(R) Peanut Butter Fudge
Totally delish, super rich and extremely easy to make. After following another reviewer's idea, I substituted 1- 12 oz. bag of white choc. chips in place of the candy bark. Made things even easier. Will definitely make this one again for the holidays!
