Vanilla Crepes

Reviewed: Apr. 16, 2009
The texture and flavor of the crepes were great! I made a berry and cottage cheese filling and added a tsp. of vanilla, two tblsp. of brown sugar and about a tsp. of cinnamon. I have experimented with other fillings cinnamon apple, chocolate and peanut butter but the berry and cottage cheese is the most satisfying. I also mixed the wet ingredients into the dry to help the batter form better. I also used a third a cup of mix instead of the 1/4 cup and it yieldes 9-12 crepes. This recipe has become a regular in our household.

Banana Dogs

Reviewed: Apr. 16, 2009
I served this for something different for my kids, fast easy and healthy. I have a family of picky children and finding something that the majority likes is a big deal. I served it with veggie chips on the side. I will serve this again sometime.

Baking Powder Biscuits I

Reviewed: Apr. 16, 2009
I have used this recipe many times for biscuits and crusts. It always comes out with a fluffy crust with a crunchy outside and a soft inside. If you use this for crusts then remember to roll it out so that it is very thin otherwise it will take up most of your pan. It is fast and easy to make and fills in for last minute recipes.

Mandarin Orange Breakfast Bites

Reviewed: Apr. 7, 2009
This was delicious I made it as a loaf of bread instead of muffins and my kids and I loved it! I am eager to try using other fruits such as dates or apricots although apples might also be good. This loaf was perfectly moist, not to sweet and I cooked it for about an hour or until a knife came out clean when inserted into the center.

Flatlander Chili

Reviewed: Apr. 5, 2009
This recipe was a huge success with both my husband and my kids. Believe me when I say that this is difficult to do! I thought that it was perfect and in order to make it good for all my family I took out a little bit of the spices for my kids who don't like spicy food and then added more seasoning to my husbands and my bowl. I think I will try adding the cornbread mix in like another person suggested to see if it betters the recipe.

Artichoke and Sun-Dried Tomato Chicken

Reviewed: Apr. 1, 2009
I altered the recipe by adding olives instead of the atichokes, using a vegetable dip powder mix instead of the pesto, added about an 1/8 a c of parmesan cheese and about a Tblsp of Oregano the same time that I added the salt and pepper. I also sauted the onion and garlic prior to adding the chicken and took out the tomatoes. I really liked it will be making it again sometime and will try it with the Pesto and Artichoke as I love them both. I will see which one works out the best.

Rice and Raisin Breakfast Pudding

Reviewed: Apr. 1, 2009
A big favorite amongst the family. May have added more cinnamon to give it a richer flavor. I added about 1/3 cup of brown sugar and will add some more nutmeg. I also used some vanilla soy milk both to make it a bit creamer and to add some more flavor.

It had a nice flavor I just need to cut it up in smaller pieces. Even the baby seemed to enjoy it.

Makeover Garlic Spinach Balls

Reviewed: Feb. 26, 2009
These are fantastic! I don't eat meat in February and these were really flavorful and fairly healthy because you only bake them instead of fry them. I will definatly have to use them again some time.

Stuffed Shells IV

Reviewed: Feb. 26, 2009
I have used cottage cheese before and unless you have cheese cloth it is really runny. So I replaced the cottage cheese with ricotta and put a vegetarian spin on it by using ground up tofu mixed in with the shells and it turns out great!
