Easy Sugar Cookies

I have never been a big fan of sugar cookies, and these didn't taste bad but were a pain to make. I used this recipe,for a Christmas party let the butter get really soft and they still turned out more like cake or biscuits then chewy sugar cookies. I also found it difficult to get them cut out because the dough was so soft even after refegeration for a couple of hours. I am still looking for a good recipe.

Peppermint Bark

I altered this recipe slightly as it was the basic recipe that I use to make homemade fudge every year during the holidays. I melted the first batch of semi-sweet chocolate added a can of sweetened condensed milk and some peppermint extract. I allowed it to see for about a half an hour to fourty minutes and worked on the second layer made of white chocolate. I prepared it the same way I did with the semi sweet and gently covered the first layer. The last or top layer was made with milk chocolate prepared the same way and spread gently over the white chocolate. I then chopped up a small box of candy canes and sprinkled them over the top. My husband loved it! By far this was the best fudge recipe I have ever made though it is extremely rich. I will definatly be making this again!

Cream of Pumpkin Soup

The soup was very flavorful and was a nice addition to fall recipes. I ended up using a can of pumpkin pie filling instead and will probably go with the unsweetened pumpkin next time. I also made this recipe before and included onion but ended up with chunks of onion instead. This time I used onion powder to give it the flavor without the chunks and it was still very good.

Homemade Black Bean Veggie Burgers

Peanut Butter Quesadillas

I held off on the butter, and made it a soy butter and jelly quesidilla because my family has an allergy to peanuts. Makes a nice addition to the classic! Will definately be making this again.

Blackberry Spinach Salad

I absolutely loved this recipe. I used regular green leaf lettuce, partially defrosted frozen blackberries and instead of feta used swiss. It was still really delicious and makes a nice alteration for salad. I will definately be making this again.

Fresh Apple Omelet

I really enjoyed this recipe. It was a little bit on the sweeter side then I would have liked and I think that it would have been better if I added more apples to the recipe. As it was I doubled it but I think that I will layer it next time. Otherwise good recipe and I will be making this again.

Slow Cooker Rosemary and Red Pepper Chicken

Mom's Pineapple-Zucchini Bread

The bread was moist, delicious full of flavor and would make a great addition to the Yule recipes. Next time you could replace the raisins with dates, dried cranberries, or apricots.

Gingered Pears

I made this recipe with alterations although I used canned pears instead of fresh. It was good but the flavor wasn't as strong as I would have liked. I will probably add some more ginger and maybe some nutmeg. I also used it as a filling for crepes for breakfast and probably will either add cream or cottage cheese to keep the filling in the crepe. Otherwise I will likely make this again.

Mushroom Stuffed Chicken Rollups

This recipe was great. It had a nice flavor and I gave it to my kids and told them that it was italian chicken. They ate it up without even being aware of the mushrooms. I actually stuffed boneless skinless chicken breasts instead of as wraps but the chicken still ended up juicy and tender. I might add some cranberries to the stuffing for next time as a holiday favorite for a turkey and I served it with walnut and raisin couscous. We'll definatly make this again.

Gingerbread Waffles

These waffles were delicious! I gave them to the kids and they got scarfed up. The flavor is really good and I didn't need to add anything to this recipe. We will definatly be making it as a regular! What a great fall recipe!

Cheesecake Bars

I thought that the flavor was fantastic, the crust was perfect however there didn't seem to be enough filling. I think that the next time that I make it I will double the filling recipe and try again. Thanks for the yummy recipe.

Banana Custard Scrunch

I served this for breakfast one morning and it came out too sweet for my taste. Will definatly add a little more plain non-fat yogurt to the mix. The bananas weren't much of a hit either with my kids, will probably replace with berries or grilled apple cinnamon slices instead. Otherwise nice healthy snack or meal. I will be working on this recipe to become a regular.

Homemade Granola

I love the variety of foods you can add to get the perfect combo of granola. I have found that less flour more oats gives you a better consistency and adding fruits, nuts and seeds gives it a nice combination of crunch and sweet without being overly sweet. Is easy to make and can be mixed with yogurt or something else for a snack.

Chocolate Brownies

I am particularly picky about my brownie recipes as some of them have come out like cake or a biscuit, others are too runny..but these were delicious! I added butterscotch chips to them and they were even better. Very rich I think I will add nuts next time instead. Otherwise I would suggest this recipe to everybody.

Russian Vegetable Pie

I changed the recipe around quite a bit so this rating is based on the changes. I used spinach instead of cabbage added the mushrooms, onions, added carrots and beets, a 1/2 lb of ground beef a condenced can of cream of mushroom soup the marjorium, salt, pepper to taste and some Oregano as I was out of Basil. I made the recipe for baking powder biscuits for the crust and it excluded the egg. I also excluded the cream cheese and added 4 ounces of cheddar. It was delicious! It will definately be a regular!

Grilled Brown Sugar Pork Chops

I didnt have the brown sugar so I mixed 1/2 cup of honey and 1/2 cup of maple syrup. I also added a 1/2 cup of motts applesauce instead of the applejuice, cornstarch and oil. It was delicious! It came out thicker due to the applesauce and was a definite hit with the family. This will be a regular addition!

Orange Chicken Stir-Fry

I wasn't particulary fond of the flavor as the orange peel added made the dish on the bitter side. Other then that I wasn't impressed and my kids who normally love oranges didn't care for the dish. I would suggest that those who want to blend the orange flavor chop up the fruit, add some orange flavoring if it still isn't enough but hold the rind. I may try making it one more time but definately not a full time recipe.
