I'm married with three kids ages 5,3 and 9mths having been a resident of WA state for the past five years and love it here! I cook on my own time, bake for family, friends, co-workers and anyone who will appreciate it. I am inquiring about taking my love for cooking to a side career but am studing to be a nurse in the OB. I have been in healthcare for over seven years and am also striving for a Masters degree in Nursing with a speciality in midwifery.
My favorite things to cook
I love to bake anything desserts, breads etc and love to cook just about anything. I have recently taken an interest in ethnic foods such as Greek, Irish and Russian meals.
My favorite family cooking traditions
During the holidays I remember spending hours in the kitchen with my mom preping the meals and baking dozens of cookies to give out as gifts to family and friends. That is a tradition that I have tried to carry on to my daughter who also loves cooking.
My cooking triumphs
My ethnic background includes Irish and Celtic backgrounds and I made a lamb with a mint and rosemary rub. The meat was tender and the flavor was extradinary. My husband loved it so much and it was the first time that I had ever worked with Lamb.
My cooking tragedies
When I first learned to bake when I was a kid I made this batch of chocolate chip cookies. I was doing fine until I misread the ingredients and put a tablespoon of baking soda into the cookies. Not only did I burn them beyond repair but that tasted horrible. I was so upset but my mom just smiled and had me start fresh. The next batch turned out great.

Easy Sugar Cookies
I have never been a big fan of sugar cookies, and these didn't taste bad but were a pain to make. I used this recipe,for a Christmas party let the butter get really soft and they still turned out more like cake or biscuits then chewy sugar cookies. I also found it difficult to get them cut out because the dough was so soft even after refegeration for a couple of hours. I am still looking for a good recipe.

Peppermint Bark
I altered this recipe slightly as it was the basic recipe that I use to make homemade fudge every year during the holidays. I melted the first batch of semi-sweet chocolate added a can of sweetened condensed milk and some peppermint extract. I allowed it to see for about a half an hour to fourty minutes and worked on the second layer made of white chocolate. I prepared it the same way I did with the semi sweet and gently covered the first layer. The last or top layer was made with milk chocolate prepared the same way and spread gently over the white chocolate. I then chopped up a small box of candy canes and sprinkled them over the top. My husband loved it! By far this was the best fudge recipe I have ever made though it is extremely rich. I will definatly be making this again!

Cream of Pumpkin Soup
The soup was very flavorful and was a nice addition to fall recipes. I ended up using a can of pumpkin pie filling instead and will probably go with the unsweetened pumpkin next time. I also made this recipe before and included onion but ended up with chunks of onion instead. This time I used onion powder to give it the flavor without the chunks and it was still very good.
