Easy Sugar Cookies

Can't believe how easy these were. I was craving something sweet last night and decided to make some sugar cookies. I looked at a few recipes that called for ingredients I didn't have (shortening) or chilling in the fridge. I wanted something quick and easy and made this recipe. They came out delicious! I doubled the vanilla and next time I'll flatten the cookies a bit instead of leaving them as balls since they didn't flatten enough for my liking. I ended up squishing them with the bottom of a glass as they were cooling.

Best Lemonade Ever

I noticed that this recipe calls for more sugar than actual lemon juice. Also, a few other reviews thought this recipe made lemonade that was too sweet. I like my lemonade quite lemon-y and tart (but not pucker-face tart), so I reduced the sugar to 1 and a quarter cups and to my amazement it was still too sweet for me! I added in an extra 1/2 cup of freshly squeezed lemon juice to tone it down further. Something to consider if you prefer your lemonade more on the tart side. Also, 6 average sized lemons for me made 1.5 cups of lemon juice using a simple citrus juicer.

Sweet, Sticky and Spicy Chicken

This was very good. Following the advice of others, I cut my chicken into bite-size pieces, and after seasoning with a bit of salt and pepper, I shook the pieces in a bag with flour before browning in oil on medium high heat. I also added the Sriracha Hot Chili Sauce to the sauce mix along with some chopped up green onions at the end. It was delicious and easy since I had all ingredients on hand. I had it on top of Jasmine rice while the mister had it in a roll. Great both ways. Next time, I would make a bit extra sauce (maybe 1/3 more) so I could have some to spoon over the rice. What I did make reduced very quickly.

Spicy Beef Curry Stew for the Slow Cooker

I made this a couple days ago and followed some of the suggestions in the reviews such as flouring the beef and using a can of diced tomatoes mixed with diced jalapenos instead of just tomatoes. I didn't find it spicy (as in hot) in the least. I found myself adding another tablespoon of curry powder at the end along with 3 dried chili pods to try to give it more heat. The beef came out very tender, but despite the flour, the broth didn't really thicken. It wasn't bad and I guess my expectations were influenced by seeing th word "curry" in the recipe name so I was expecting something a lot hotter and thicker. It is a good, simple beef stew though.
