Mom's Brussels Sprouts

Reviewed: Nov. 5, 2003
Wow, I never would have thought that brussel sprouts could actally taste this great! This recipe is so easy and tasty. I used fresh brussel sprouts, roughly two handfuls and then pretty much followed the rest of the recipe, but eyeballed the rest of the ingredients. I don't have a microwave, so I simply let the sprouts remain the strainer and put the butter (margarine, actually), nuts and spices in the same pot I cooked the sprouts and let it all melt and warm up. I put the sprouts in a glass dish and poured the sauce over top. This is worth trying and I'll make this again. Thanks for the great recipe!

Easy Decadent Truffles

Reviewed: Oct. 17, 2003
I gave this recipe 5 stars for the ease of making the truffle mixture and for the taste, but, these took me all afternoon to roll into little balls! That's likely because I made four different flavours and did it alone. I made Bailey's, Amaretto, Rum and Kahula flavours. I rolled the Bailey's and Kahula in cocoa and the Amaretto in icing sugar and the rum in walnuts. This recipe makes a ton! I gave some as a gift and the rest were for family. They were a big hit at Thanksgiving and a few asked me for the recipe. When I need to make something decadent and impressive, I'll use this recipe again. Thanks!

Roasted Root Vegetables With Apple Juice

Reviewed: Oct. 17, 2003
This was really good. It even turned out despite my errors. I was impatient and didn't boil the apple juice and wine enough before adding the butter and pouring over the veggies. I felt guilty and pulled them out of the oven after 5 minutes or so, drained it and put the apple juice and wine back on the stove to reduce further. Then I reduced it too much! I poured the mixture over the veggies again and threw it in the oven for a second time. I let it cook for about 35 mintues and it turned out great! So yummy! I used a couple of sweet potatoes, some carrots and parsnips. The veggies had a nice flavour and had a bit of a gourmet taste to them. Not your typical cooked veggies. I'll make this again; thanks Christine.

Becca's Custom Turkey Shepherd's Pie

Reviewed: Sep. 9, 2003
This was delicious! I only had one pie crust in the freezer, so I halved the recipe and it turned out great. I didn't use green beans or mushrooms, but substituted green peas and chopped pickles and I used yellow zucchini. I also used cream, not milk for the mashed potatoes, yum! The spices were lovely and the overall flavour is wonderful. The "filling" is so good, you could eat it alone. I found that this recipe is a bit time consuming, but the taste is worth the work. Thanks for the recipe!

Buffalo Style Chicken Pizza

Reviewed: Jul. 24, 2003
Yummy! I love buffalo chicken fingers and this was a great idea! I used light ranch dressing, not blue cheese and used Louisiana hot sauce. I also used a prepared pizza crust. I got a little excited at the prospect of this pizza and put a bit too much of the hot sauce on the pizza and found that the sauce became quite runny. I'll hold back next time and it should be a less messy pizza. It was delicious despite the mess. I'll make again, thanks!

Delicious! This sauce would be great on many things. Didn't change anything in the recipe. Will make again! Thanks!

Spiced Chicken Loaf

Reviewed: Jul. 4, 2003
I had never made any type of "meatloaf" before and since I like to use ground chicken in place of ground beef, this recipe was one I wanted to try. This recipe is great! I followed the directions exactly, but did follow other users suggestion of putting a ketchup/bbq sauce glaze on. Next time I may add some green onions for colour, but other than that, it needs nothing else. Yum! Thanks for the recipe!

Steamed Tuna Fish

Reviewed: Jun. 18, 2003
Tried this last night and it was quite good. The sauce is really tasty and packs a punch. I followed the recommendations of other reviewers and used less ginger. I had never steamed fish before, so that was interesting. I may have overcooked the tuna, but the taste of the sauce made up for it. I'll likely make this again, thanks!

Thai Chicken Burgers

Reviewed: Jun. 3, 2003
To sum up, YUM! I usually make regular chicken burgers, so this was a great change. Here's what I did differently: I didn't have any red curry paste, so I added a whole lot of cayanne, also, I didn't have any lemons, so I just added a little more lime juice. I also didn't have any mint, so I just added the mayo (Miracle Whip) and coconut together. I didn't let it mingle for an hour, but the flavours of the mayo were still great. I'm looking forward to making some to freeze for our camping trip! Thanks for the terrific recipe!

Garlic Green Beans

Yum! So quick and easy. This will become a regular recipe in our house. I used fresh beans and plenty of cheese. Paired this with fresh salmon kabobs and it made a great meal. Thanks for sharing!

Crispy Coconut Chicken Fingers

Reviewed: May 26, 2003
This tasted good, but not amazing. I found it pretty messy to make, and the coconut is quick to burn. I found that some of the chicken fingers had coconut that was burnt while others weren't fully cooked yet! The dip was very good and really helped for the burnt ones! I'm not sure I'll make this again.

Kitty Litter Cake

Reviewed: May 8, 2003
I made this for a Halloween bash about a year ago. Everyone was grossed out by this cake they were teasing each other to eat it. But once they did, yum! It truly does look like kitty litter! I went to the dollar store for my props (scoop, litter box) which really added to the effect. It was also fun to make! If you're looking for something for your guests to talk about, make this!

Baked Cheese Olives

Reviewed: May 1, 2003
I've made these so many times I practically have the recipe memorized because we love these! Like other reviewers, I also had the "dry dough" problem, but my solution was to add some olive juice/brine to the dough. It makes it moist (without extra butter!) and easy to shape onto the olives. Just make sure that you don't add too much "juice" or the dough gets slippery. These were a hit at a Christmas party and people still talk about them even now! The only reason I didn't give 5 stars is for how time consuming these are, but they taste so good!!

French Onion Soup I

Reviewed: Apr. 30, 2003
I'm not sure why others think this soup is bland. It's delicious! Tastes just like the soup my mother makes. I did do a couple of things differently: I used a little less sugar, I let it simmer for about 35 minutes and when it came to adding the flour, I combined a tbsp of flour with some water in a small container and then slowly added it to the onions so there weren't any lumps. Do add some salt and pepper. I'll make this again! Thanks!

Baked Tortilla Chips

Reviewed: Apr. 7, 2003
These are great! I used less oil and used a pastry brush to apply to torillas. Omitted cumin and only used chili powder. I've made quite a few batches of these and they go fast! Do make sure that you watch them so they don't burn. Thanks for the recipe!

Awesome Grilled Cheese Sandwiches

Reviewed: Mar. 17, 2003
Yummy! As my guy doesn't really fancy grilled cheese (but I do!) I but some corned beef and tomatoes and cheese in his and toasted in the oven. He thought it was great! I put tomatoes in my grilled cheese and it was so good. I followed the recommendations to use less butter in the centre of the bread and more around the edges and it toasted perfectly. Will make more sandwiches this way!
