About this Cook
I cook and bake from scratch. A single man with all the toys, bread machine water bath, pressure cooker, etc. Have over 200 cookbooks. Have a kitchen and know how to use it. Just got a new wok (non-stick) to replace my old carbon steel one.
My favorite things to cook
I do every thing and I like my cooking. I seldom go out to eat as I'm a better cook than most of the chefs. I plan my meals and shop from a list of what I need.
My favorite family cooking traditions
Love NC style smoke pulled pork with pepper/vinegar sauce. When I make it I use three Boston butts and freeze for later use.
My cooking triumphs
Making the best pasties in the world. I grind my own meat with an old grinder that's hand cranked (coarse disk). I'm also a home brewer with a couple of national awards.
My cooking tragedies
Just can't seem to get waffles right, so I buy frozen. Don't eat them much, instead I make french toast.

Easy Sausage Cheese Balls
I've made these for over 30 years and for what it's worth add some a medium diced onion (very very small dice) and a bit of chile or chipolte powder (I like spicy). I agree with others that the correct ratio is 1 sausage to 1 1/2 baking mix and 2 cups cheese. Use extra sharp chedder and hot sausage. I've given the recipe to so many people over the years I've lost count.
