About this Cook
Born in Mississauga, Ontario and then moved to Vancouver, British Columbia. I enjoy music, photography, biking/hiking, reading and culinary artistry. I find that I am mostly inspired by colours, words, and the seasons, but I also try and absorb any knowledgeable expression I can find. I look up to such chefs as Alton Brown, Bobby Flay and Giada De Laurentlis
My favorite things to cook
I LOVE Italian and Greek. Their philosophy just as much as the menu. The family and the tradition. I like preparing large meals, although I have to downsize a lot at home, I used to put some big ensembles together for various kitchens I have worked for. I also have a love for the grill.
My favorite family cooking traditions
Well my mom always had a meal on the table every night, despite working full time running a restaurant. I never really appreciated this until I moved out for school. At home, my Mom pretty much stuck to the protein/starch/veggies/sauce-gravy configuration. My Nana would probably known for her seasonal family meals such as Turkey, Beef & Barely Soup, Chicken Stew w/ Dumplings.

My cooking tragedies
One time, years ago, when I first started working the floor, I got swampt and I started to sort of panic. Someone asked me for HP Sauce. I ran to the walk in and grabbed the first brown bottle I saw...the guest later let me know that it was chocolate sauce.

After-Thanksgiving Turkey Soup
Had to change proportions a little bit because I elected to add a turnip, a whole bushel of broccoli, and more of the main ingredients. Didn't have have half/half so I mixed 1% w/ whipping cream, also flavored with some fresh herbs to give it a little more of a "earthy glow". Otherwise, it tasted great, and any of my alterations were on account of preference...Oh yea I also added a ball of the leftover stuffing, cold, into the bowl and poured the hot soup over to conceal.
