Almost 6 months has passed since I last made an entry here.  Wow.  SOOO much has happened:
  • My husband and I went on a 25th anniversary cruise.  (Thank you, dear, for 25 amazing years!)
  • My oldest daughter graduated from college in May.
  • My youngest daughter finished her freshman year in college.
  • My stepfather was diagnosed with esophageal cancer in late June.
That's not the entirety of my life, of course.  :)  The day-to-day grind of a full-time job and the week-to-week joy of serving in our church's children's ministry adds to the fun.

People who know that I am trying to eat vegetarian-ly often ask me, "Are you still doing that?"  It's getting a little easier.  I still cheat on cheese, although I don't go overboard (at least I don't think I do).  I will try the vegetarian cheese shreds next.  I used the Galaxy Nutritional Foods Veggie Slices/Swiss for my veggie burger this afternoon and was pleasantly surprised.  Not bad!

I'm also using the myfitnesspal.com website to track calories.  I have lost almost 4 pounds in three weeks.  I did notice on one day that the dreaded sugar craving familiar to vegetarians struck me with a vengeance!  I'm back on track now.  I see my doctor in two weeks, and I expect to be stuck (haha--lab tests!).  I'll see whether those cholesterol levels have budged in response to my ongoing vegetarian efforts.

I am marinating salmon right now, using the Honey-Ginger Grilled Salmon recipe from this website.  I do allow salmon on the "vegetarian" diet since it's supposed to be so good for cholesterol levels.  It's fun to try the various salmon recipes, and my husband loves them.  I think he just likes it when I cook for him.  :)  (That's an inside thing.  He works an hour away, and works late on most nights.  We can rarely eat together on a weeknight.)

It's a beautiful but HOT day here.  I have ticked off four things from my to-do list; marinating the salmon was one of them.  I'm off to tick off something else!

I use a list too, if I don't nothing get done. There is just something about checking an item off that is motivating.
