My Contract with My Body

It hasn't been as hard as I thought to be more vegetarian. Well, it hasn't been so hard for me. My poor dear husband, though, isn't getting as many of my delicious former recipes as he did before the prescribed vegetarian diet.
So, I have come up with a pretty decent compromise, I think. On Sundays, I will make some of his old favorites. Beef Burgundy over whole wheat egg noodles is something that goes well in the crock pot before we go off to church on Sunday mornings. Easy chili
for football games is also a crock pot Sunday favorite. (I would consider a vegetarian version of chili if I could get him to eat it!) He likes Chicken Cordon Bleu with rice pilaf and green beans almondine. French Dip Sandwiches--I think that came directly
from allrecipes.com--is a crock pot recipe that I may consider when the daughters are home from college or when my mother and stepfather come over to visit. Actually, many of those crock pot recipes would be quite serviceable for company.
The rest of the week, and even on Saturdays, I can stick to vegetarian meals or the twice-a-week salmon I am trying. My husband likes salmon, thankfully, and I have a few good, easy recipes for it.
When I think about how blessed I am to have these many choices, and even to be aware of my medical challenges, I am grateful! How can I complain that I "can't eat anything?" :) This will be an adventure.
