Crunchy Pumpkin Pie Granola

I actually ended up changing this recipe a bit. I didn't have the proper pumpkin spice mix so I just added cinnamon, ginger and nutmeg. Didn't have pecans, so I used almonds. To make it more like pumpkin pie I used pumpkin puree instead of apple sauce. Found I had to bake it longer than the recipe showed, but it continued to dry after I removed it from the oven. It has excellent pumpkin flavour with the puree in there and the whole family loved it. Will definitely make this time and time again! Don't be afraid to play around with the recipe.

Texas Glazed Pecans

Awesome! We did them in the frying pan instead of baking them because we needed them super quick. Turned out great and made our salad a hit! Also went very well with our baked brie :) Will definitely make again!

White Chocolate Blondie Brownies

My family loved the concept of a white brownie! These were very tasty and we loved them. The only thing that didn't go so well was the baking. Mine turned out too browned and crispy on top, which wasn't what I was going for. I wonder if it's because I was baking them in a small toaster oven and they were too close to the element? I will probably put them on a lower rack and try a lower temperature for longer next time. So yum though. Thanks for sharing the recipe :)

AWESOME! The only problem was that it was too salty (I think because the feta is already pretty salty) so next time I won't add much. I went on Youtube to find a good video of how to fold them because it was my first time. After a few tries I got it figured out and they turned out perfectly. Everyone loved them and I'll make them again soon!

Raspberry Tossed Salad

Very summery, fresh, delicious salad! It was gone by the end of the meal and the whole family dug in. Not everyone enjoyed the vinaigrette dressing, but I thought it was nice. Used only 1 T cider vinegar, instead of the 2 called for. Wonderful with garden fresh raspberries and lettuce :)

Zesty Stuffed Peppers

These were a lot of fun! We followed the recipe for the most part, but replaced the rice in the filling with cous cous (a substitute in a jiffy! no one missed the rice) and used a steak "splash" because we didn't have steak sauce. Gave it a zesty taste that everyone loved. Topped with a bit of cheddar and mozza. We will definitely be making this again. I can imagine throwing all sorts of leftover meat sauces into peppers and baking it now!

Raspberry Salad Dressing I

I changed this recipe up quite a bit because I was in a hurry to get a dressing on the salad. It turned out great though and went fabulously with the blueberries and carmelized pecans in my salad. I used raspberry yogurt instead of plain yogurt + raspberries. Since it was already sweetened I left out the sugar. I used white vinegar instead of the red wine vinegar that was suggested and a bit of aged balsamic. I know it sounds strange, but it was delicious! Mixed it up with a spoon, not the blender.

Mom's Best Pork Chops

Second time around I didn't bake these. My chops were thin enough that I could just fry them for a few minutes on each side and that didn't dry them out too much. These were really nice. I had to add extra seasoning to the breading and egg mixtures. Nice with gravy on top!

Peanut Butter and Honey No-Bake Cookies

Oh wow, these are good! Mmm, so yummy when they're still warm and gooey. I love the honey in there! I did the 2 1/2 min of boiling like other reviewers had said, with good result. Will definitely be making these again. So easy in my dorm room :)

Tia and David's Deep Fried Tortellini

To make these a bit healthier I baked them instead of frying them. I did them on 350F for 10 minutes, and they turned out great! Still crispy and delicious. I had a hard time knowing what to dip them in though. I added some "Johnny" seasoning to the breading near the end and really liked the flavour it added. I found that I needed a lot more breading than the recipe called for in order to fully coat the pasta.

This was good! Used ground beef instead of turkey and omitted the Chinese spice mix. But it turned out very good. Everyone loved it. Better with 2 pineapple rings vs. one!

Pumpkin and Sausage Soup

I'm rating this 2 stars because made as it is posted it somehow turned out all wrong for me. More of a thin broth with no pumpkin flavour, texture or colour. I ended up adding a lot more pumpkin in. It was homegrown, roasted pumpkin, which I strained, pureed, then added, instead of letting it cook in the soup. This made it a very quick soup, as I did not have to simmer for 45 min. I doubled the thyme and added a bit of rosemary. Used 3/4 cup 1% instead of the cream, left out the butter, and added salt. I didn't have praline liquer so I added a touch of maple extract. Not a bad thing! Overall, I was a bit worried I hadn't done enough to "save" the soup, but everyone loved it! We really enjoyed the chunks of sausage. Definitely excited to eat the leftovers and will be making it again seasonally. If you fiddle with the levels, you can't go wrong with this recipe. Thanks MARBALET :)

Baked Omelet

This worked great. I poured my egg mixture into smaller ramekins versus a big casserole dish and they turned out golden and puffy like a souffle :) nice flavours. My guest said that she liked it better than pan fried omelets.

Simple Chicken Parmesan

So good! Whole family loved it! The note says that it makes twice as much sauce as is needed, but I let it simmer while I did the chicken and it reduced and got thicker and was just enough. I doubled the oregano and basil and added a bit more sugar, as per our family's taste. Word to the wise: the breading on the chicken burns fairly easily at med-hi heat, so a medium heat would be better. I am already excited to make this again!

Homesteader Cornbread

This is good! Maybe I like this because I am from Canada, where the recipe originated from :) Little bit sweet I thought at first, but it actually goes really well with my pork chili. I added about 2 tsp lemon juice because I like my cornbread with a slight lemon-y taste, and it is great. Found that the temperature was maybe too high, as the edges got quite browned and crunchy quickly. Will experiment with temperatures and bake times next time.

Maple Walnut Scones

Absolutely delish! Definitely a no brainer. I will be making this one time and time again. Changes: pecans instead of walnuts (good choice), 3/4 c oatmeal (but don't decrease the amount of flour at all, you need it!), and 1% milk instead of half and half. I found I only needed to bake them for 15min. The glaze was mildly disappointing as it didn't turn out like a thick icing in the picture. I guess I was hoping for that. Next time I'll use less water to get that consistency. Everyone loved these and gobbled them up right away.
