Chicken Curry I

Banana Banana Bread

I've made this recipe several times as written. I always add a tsp or two of vanilla, but other than that i keep it as is. This last time i made it i halved the recipe and made some changes. It called for 1/4 cup & 2 tbsp brown sugar. I put in 1/2 brown sugar but used 2 tbsp of honey instead. It also called for 1 cup 3 tbsp of bananas. I only had 1 cup (the reason i halved the recipe to begin with) so i used 3 tbsp of almond butter (my husband is allergic to peanuts). I added a good handful of chocolate chips and made 12 muffins. THEY ARE DELICIOUS!! so good. just what i was looking for. This is a great recipe by itself, but it's great as a base recipe too! bravo.

Chewy Chocolate Cookies I

simply amazing. i've done a ton of different versions of this recipe including peanut butter filled, mint chips, caramel chips, and coating the whole cookie in powdered sugar. it's just a great cookie base.

Southern Sweet Ham Glaze

We made this for Easter ham and it was great! I halved the recipe because my ham was fairly small, and used whiskey instead of bourbon because that's all I had. We only put in half the amount of cloves. It made the ham a beautiful color, coated it well, and wasn't too sweet. Complex favors. I liked it a lot.

Sweet Potato, Carrot, Apple, and Red Lentil Soup

I made the soup as is, except i completely forgot to add the lentils! the whole point of making this soup was to use up the 1/2 cup of of red lentils i had! dang. also i added two dashes of cayenne pepper. it was delicious.

Carrot Cake III

I'm would have given it a five for taste, but i knocked a star off because it's so hard to work with. I can't believe i'm the only one who had trouble with this recipe. i had to make this twice because the first batch collapsed. i baked it last night in two 8 inch rounds at 350 for 50 minutes, the toothpick came out clean, i let it cool for half hour and when i came back in the kitchen to make the frosting, they had completely collapsed in the middle. the cake was not even close to being done. My oven is true to temp, and i bake all the time so i was baffled. i wouldn't have wasted my time making it again, but i tasted a chunk from around the edge and it was so good i had to. I was making it for a birthday today so i made it again this afternoon. i baked them for 60 minutes and they were still not quite done so i turned the oven off and left them alone for two hours. I pulled them out of the oven and let them cool for 20 minutes and then ran a knife around the edge before turning them out. the first round broke in half and stuck to the bottom of the pan. i was more careful with the second one and it came out better, but it was still mangled, which only made it harder to frost. This cake is like a brick it's so heavy. but it is delicious!

Lemon Cranberry Muffins

the texture was really good. nice and moist, but it wasn't very lemon-y. i used a full teaspoon of really good quality lemon extract as well as the zest from a whole lemon and i could barely tasted it!

Balsamic Chicken

i didn't marinate the chicken (i just cooked the chicken with salt and pepper), but i did reduce the sauce and roll the chicken around in it before i served it. I thought the sauce was delicious, but it was a bit too sweet for my taste (i LOVE vinegar). Next time i will take the time to marinate the chicken.

Original Chex® Party Mix

I agree with some of the other posters. I make enough of this at once (usually 2 or 3 times the original recipe) that I bake it in the oven instead of putting it in the microwave. I bake it at 250 for an hour, stirring every 15 minutes. I love making my own chex mix because I can put my favorite things in it. Mine has cheese itz, cashews (my husband is allergic to peanuts), corn chex only, pretzels, and rye chips. YUM!!!

Layered Chicken and Black Bean Enchilada Casserole

i took this to a pot luck at work. everyone loved it. I used slow cooked tinga (spicy pork) instead of chicken. i doubled up on the tortillas because of the other comments about them disappearing in with the rest of the ingredients. I also left the cilantro and the sour cream til the end. I would use more sauce next time to compensate for that though as the end result was a little dry.

Kale Chips

I made these and they were good, but it was touchy getting them to cook without burning them. I just watched an episode of Jacques Pepin and he did kale chips, but he put them on a wire rack and baked them at 250 degrees for 20 minutes. I tried that the next time i made these and they were FANTASTIC.

Vegan Red Lentil Soup

i didn't make this vegan (because my boyfriend has to have meat at every meal), but it was really good. I used chicken stock in stead of veggie stock, and i grilled a pork tenderloin with sweet curry powder before cutting it up and putting it in the soup. It was delicious!
