Vegan Cupcakes
my husband has recently gone on a health food kick, and i was aching for some cupcakes, so i made these. They are great! my first vegan cupcake recipe. The only thing i changed was the oil. To cut the fat (because i knew i wanted cream cheese frosting), i substituted unsweetened apple sauce and they were very tasty. my husband liked them!

Hamburger Potato Casserole
very bland. But a good base recipe. I added three cloves of garlic to the onions, which I sauteed before browning the hamburger. I added the can of soup to the meat in the skillet and warmed it up. Then I added about 1/3 cup of white wine and let it reduce a minute or two. Then I added the milk. I added sliced carrots in with the potatoes and layered cheese along with everything else. I ended up using cream of potato soup (because I had it and I don't care for mushrooms) and it turned out great!

Kale Chips
I made these and they were good, but it was touchy getting them to cook without burning them. I just watched an episode of Jacques Pepin and he did kale chips, but he put them on a wire rack and baked them at 250 degrees for 20 minutes. I tried that the next time i made these and they were FANTASTIC.
