Vegetarian Mexican Inspired Stuffed Peppers

SOOO good!!! I did as another reviewer suggested and baked the green bell peppers (I used 8 peppers) for 10 minutes at 250 instead of boiling, as I didn't want them to lose their flavor. They were still pretty crunchy, so I wouldn't go that way if you want softer peppers, but I liked them just fine - and they still had that lovely bell pepper taste. I also used quinoa instead of rice - DEFINITELY the way to go. The texture was wonderful. I also followed a different reviewer's suggestion to improve the flavor profile by sautéing the onion with fresh garlic (always use fresh!!) for 10ish minutes, then adding the beans, cumin, and chili powder for another 10 min of sautéing, then setting aside until the quinoa was finished. Tossed those together with the tomatoes and cheese, and stuffed them into the peppers. The stuffing is DELICIOUS. Great recipe overall. Healthy and delightful - and, even better, looks really pretty and fancy for dinner guests. Will definitely make again.

Winter Vegetable Hash

Delicious! A lot of prep work, but I did not mind - cooking is fun. :-) Makes a very fresh, seasonal side dish. I did as another reviewer suggested and started out sautéing the potatoes with the onion and fresh garlic (instead of seasoning) for 10-15 minutes, then added the rest of the veggies (except the kale). Turned out perfect - the potatoes were nicely done. I also used portabella mushrooms since I couldn't find shiitake, and it tasted just fine. Definitely a keeper for a warm fall/winter meal!

Easy OREO Truffles

I screwed this up somehow with the baker's chocolate. Don't let it melt too long!!! I tried to add milk to thin it; it turned out crappy. :-( Need to give it another shot.

Tomato Bread Salad

This salad was fabulous! Wouldn't change a thing, except for maybe a little more garlic... because I like garlic. I would also agree to cube things smaller, as the sliced tomatoes were a little big for the bread. We didn't toast the bread, though, and it was DELISH- not too soggy at all. Yum!!!

Mom's Macaroni and Cheese

OH MY GOSH, I cannot believe this recipe has only 4 1/2 stars. It is AMAZING- best mac and cheese I have EVER had. Do the recipe exactly as it is written and you will not regret it. I have gotten compliments every time I make this, and I have made it at least 5 times in the last few months. SOOOO good.

Oreo® Cookie Cake

Only 1 container of cream cheese and chocolate instead of vanilla made this dish fabulous the second time around! It was tangy for us as well the first time, and the vanilla pudding tasted a bit strange to me. SO filling but SO good!

Baked Garlic Parmesan Chicken

I actually was not impressed with this recipe after trying "My Mom's Parmesan Chicken." I also used the seasoned bread crumbs, but still found it to be dry and much less flavorful. Try "My Mom's" recipe for a much more moist alternative!!! Mmm, mmm!

This chicken was wonderful! Moist and delicious. Absolutely use the wine- it didn't turn out mushy for me at all, and I doubt it would be as moist without it.

Wonderful recipe! SUPER delicious and very easy to make. I doubled the recipe, used a little extra sauce and meat, whole wheat penne pasta, and it turned out superb. YUM!
