Quinoa and Black Beans
Liked this a lot. I added more cumin (1/2 T) and cayenne (1/2 tsp) and probably could have used more. I thought the 2 cans of black beans were just right. Most people think of veggies as being the "small" part of their meal, but it really should be the major part; the grain should be less. Corn is a grain too, so it's best to add the second can of beans for a well-rounded healthy meal. I think 15 min prep time is not correct. Preparing the cilantro (plucking from stems, washing, drying and chopping) took 15 minutes! Worth it though.

Hot and Spicy Tofu
I didn't press the tofu and it started to fall apart and stick to the pan, it was spicy enough but I think it should have other veggies in it for taste, for looks, for variety

Roasted and Curried Butternut Squash Soup
Very good, but I think it would have been better if I had used a larger squash. NO where in the reviews does anyone say what size they used -- at least I couldn't find any. Around here our butternut squashs range from 2-8 lbs. I pick a 3lb squash but i think it should have been larger. The large onions overwhelmed the squash flavor and 6 C broth would have been WAY too much. I used 4 cups. I think it's a poorly written recipes when it doesn't specifiy the amount of the main ingredient.
