Boiled Chicken
This was my first time boiling chicken and it came out sooo tender and delicious. I bought a 2 pound WHOLE chicken and all I added in the water were carrots, flattened garlic cloves, pepper, an salt. The rest of the flavors came from the chicken. I simmered the chicken just before boiling (following a reviewer's suggestion) and the meat really did fall off the bone. YUM! Also, since I used a 2 pound chicken it only took me about an hour. I agree with the reviewers that said to keep the skin for the extra flavor, and then skim off the fat later.

Soft Oatmeal Cookies
This was my FIRST time baking oatmeal cookies and it came out delicious! I substituted white sugar with Splenda (cant even taste the difference!) and I used whole wheat flour instead of all-purpose since I had it on hand. In addition, I added some Craisins. It is true that the cookies do not flatten much in the oven, so flatten it beforehand to approximately however thick you want the cookies to be. I made it a little thicker because I prefer chewy and soft oatmeal cookies rather than crispy. It did take the full 10 minutes to bake. These were so good and easy to make, I'll never buy oatmeal cookies again!
