Sugar-Free Frosting

I omitted 1/4 cup milk using only 1 1/2 as one reviewer suggested. My finished product with a 1.5 ounce sf ff jello pudding was easy to spread. I put it in the fridge right away so the icing could firm up a little bit. It made quite a bit more icing than I needed for 9" layers. I threw the leftovers in the trash. All in all it was quite nice tasting for a low sugar icing. I could taste the cream cheese (I used 1/3 less fat type). Using vanilla, which I did, I can certainly see it being good for a carrot cake. I put mine on a sugar free Devils Food Cake.

Chocolate Chip Banana Muffins

I made the recipe exactly as written and the muffins were delicious. I liked using oil instead of butter and thought the yogurt was a healthful addition. The ONLY thing I would do differently next time is add some chopped walnuts. A bit of crunch would be nice. I'd maybe add 1/2 cup chopped walnuts to the final batter.

Broiled Tilapia Parmesan

Yummy! I read several reviews (including the very few bad ones) and have to agree that this is a keeper. It was so easy to make. The sauce was delicious after broiling as it browned the Parmesan cheese giving it an almost nutty flavor, and yet the herbs and lemon juice kept it perfectly tart. I followed the recipe almost as written except I reduced the mayonaise a bit (based on a recommendation) and used a combo of ground celery seed and salt instead of the celery salt. This would indeed be a good choice for company.

Cottage Cheese Pancakes

I love the idea of cottage cheese pancakes and these really deliver. I follow the recipe as written and they turn out delicious! I enjoy topping them with low carbohydrate jam since the pancakes are fairly low carb. Fits as a treat on my low carb diet and a great alternative to eating eggs and yogurt for breakfast, which most low carb dieters end up doing.
