I am an Environmental Scientist living/working in Little Rock, AR. I enjoy cooking because it is a hobby that offers an immediate reward. I am Irish by choice. I am a HUGE Cubs fan! I enjoy working, play, being outdoors. I watch a lot of movies (don't so much like tv). I like to tinker/build things in the garage. I am a Christian (Catholic specifically), and I try (though don't always succeed) to put my trust in God everyday. Shout out to android devices. If you have one get the free app "Grocery iQ". It is a great grocery list manager. (I have been using it the past 6 months and have found it very helpful).
My favorite things to cook
grilling anything, homemade soft pretzels(though it makes the biggest mess), cookies, brewing beer (maybe not technically cooking to some but it does have to boil between 45min and 2 hours), soups in the winter (check out my mexican soup recipe), lots of green food for St. Patricks day (the second greatest holiday of the year), etc.

making cookies with mom was always fun when i was a kid, large extended family so always lots and lots of food at holidays/get-togethers,
My cooking triumphs
I have perfected soft pretzel making, spit-roasted goat, great kabobs, and an array of deserts.
My cooking tragedies
I didn't really cook anything until I moved away for college (mom always, dad sometimes, made the meals).. so many tragedies before I started enjoying cooking. Worst one ever... my first week away from home I microwaved a frozen chicken patty. Left it in way to long. When I opened the microwave smoke bellowed out and my chicken patty was about the size of a golf ball. I lived in a duplex and the next day the landlady called because the people next door though the air-conditioner was burning up. I also once tried to brown meat in a pot of boiling water. I think I have come a long way since those days.

Whole Wheat Beer Bread
Very good. I used "Honey Brown" for the beer and added about two tablespoons honey.

Holiday Hot Spinach Dip
Possibly the best spinach dip I have ever had. I did add more cream than was called for to get a better dip consistency. Have made this on several occasions with positive feedback from everyone who tried it.

Stuffed Peppers My Way
Good basic meatless stuffed peppers (especially for a Friday during Lent). I left out the feta (forgot about it) but didn't miss it during dinner. I also used red, orange, green, and yellow bell peppers. The colors were very nice for presentation. (Leftovers were good as well.)
