Cornbread Muffins I

Reviewed: May 10, 2012
Yum yum yum delish! I didn't use the actual corn because it was in the meal we were having with the cornbread. SOOOO much better than any store bought mix!!

Cajun Chicken Pasta

Reviewed: Nov. 30, 2011
Ok, the "sauce" isn't much of a sauce, mostly just heavy cream with a few spices added. The sauce stayed very thin, even after bringing to a boil. Wasn't worth it for as much fat as is in this recipe! It tasted fine, just not our fav!

Shredded Chicken Tacos

Reviewed: Nov. 6, 2011
I used just the chicken for enchiladas, and they were a big hit! Just added some diced green chiles, cheese, & enchilada sauce to the top, along with more cheese. Baked 350 for 20 mins or so, and they were delicious! You could use just the chicken portion for a lot of Mexican dishes. Yum!

The Best Rolled Sugar Cookies

Reviewed: Nov. 23, 2010
I don't know how this recipe got such amazing reviews!! The dough is SOOO sticky! You'll need to add AT LEAST 1 more cup flour. The cookies turned out fine, not more amazing than any other sugar cookie recipe I've tried... I try not to be negative on people's recipes but this one just didn't work!! And don't tell me I did it wrong- I made 14 batches and they ALL turned out almost goey! Way too sticky. Prepare to buy another bag of flour if you wanna use this recipe. =/

American Shepherd's Pie

We added corn and peas to give it more substance. It was good- not phenomenal, but good.

Fried Rice Restaurant Style

Reviewed: Mar. 25, 2009
As is, not good. The rice has absolutely no flavor. You have to cook the rice in broth, or somehow add more flavor. The rice is really sticky and I had to add a lot of soy sauce, but then it just tasted like rice with soy sauce. Needs much more flavor.

Peppered Bacon and Tomato Linguine

Reviewed: Mar. 16, 2009
Good taste, but sauce is too runny and there's not enough. It's missing something that could thicken up the sauce.... We added peas to give it some color- good addition.

2-Step Inside-Out Chicken Pot Pie

Reviewed: Feb. 25, 2009
I loved this! I used fresh carrots, broccoli, mushrooms, and frozen corn and used 2 cans of cream of chicken soup. Both my husband and I loved it! I also added some celery salt, garlic powder, and paprika- a couple shakes of each. SO good! And you can adjust it to whatever you like! Yum yum.

Chicken Enchiladas II

Reviewed: Feb. 12, 2009
Excellent! Exactly what my husband and I were looking for in a chicken enchilada recipe! And I'm not sure what other reviewers were thinking, but we loved the flour tortillas- definitely wouldn't change that. We added a can of enchilada sauce instead of milk because it gave it a richer flavor. That's all we changed and it was wonderful!

Philly Cheesesteak Casserole

Reviewed: Feb. 12, 2009
Overall the dish was pretty good. We cut it down a little- used 1 lb ground beef and 1 can of cream of mushroom soup, but it turned out pretty well. It could definitely use some color- possibly some green peppers or peas. The cheese on top burnt when we put it in for 30 minutes so I would suggest 20-25 minutes, just watching it closely. I would make it again!

Ginger Beef Stir-Fry

Reviewed: Feb. 8, 2009
Yum Yum Yum. Especially if you like ginger. It was a great combo of flavors and veggies. The sauce definitely needed to be doubled. We served it over brown rice and there was barely any sauce for the rice. Double the ingredients for the sauce and I'd give it a 5!!
