Some of my guests really enjoyed this, but it way way too sweet for me. It reminded me of sloppy joes, which I enjoy but was not what I was intending when making this for a party.

Arroz Rojo (Mexican Red Rice)

I'm glad I picked this recipe in a hurry last night. I usually will not choose recipes that have not been highly rated by many people and choosing a recipe with only 1 rating is not normal for me. So I had to give this recipe a review. The rice turned like a classic Mexican rice. I didn't have enough fresh tomatoes so I puréed a 12 oz can and used about 3/4 of the can. I also added a little extra cilantro and next time I will also add green chiles. This one is a keeper.

Chicken Garlic Pizza

This is such a great recipe. I used fresh parsley, basil and cilantro. Red bell pepper, left over grilled chicken and yellow onion (in addition to the green). The options are limitless!

Mediterranean Quinoa Salad

This was a great light summer salad. I had to make a few substitutions due to my ingredients on hand. I did substitute the red bell pepper for green added a tbs of fresh basil and one large cucumber. Amazing. I placed this on a bed of baby spinach and it completed it perfectly. Already looking forward to leftovers.

Outrageous Chocolate Chip Cookies

The only change to make to these is using milk chocolate chips instead of semi sweet. I stumbled upon this by accident and I will only ever make them this way. They are my go to cookie recipe. Always a hit at holidays and events.

Pumpkin Wheat Honey Muffins

Great muffins. I used the Pumpkin Pie Spice recipe instead of the store bought spice and added a dash of cloves. These are amazing. I will be freezing them for quick breakfast muffins. I also added 2 tbs ground flax seed to improve the health quality. These are excellent.

Maple Walnut Pumpkin Pie

Made a big mistake. Added evaporatedmilk instead of condensed and sweetend milk. Added one cup of sugar to make up the difference added a dash of vanilla and almond extract to make up the difference and a splash of maple syrup. Keeping fingers crossed it turns out okay for dinner tomorrow.

Spaghetti Squash I

Fantastic! This is a great Greek flavored side dish. This would make a complete meal with just a small fresh mixed green salad. I will be making this again very soon Review 2: I am in love with this dish! I am still eating the leftovers and enjoying every bite

Sweet, Sticky and Spicy Chicken

I did not care for this recipe. My first problem is I should have never salted the chicken as the recipe suggests. Once the soy sauce is added there is more than enough salt to give the chicken flavor. This recipe was just way too plain for my taste. I love asian inspired food and this just did not satisfy it for me.
