Cream Puffs I

Reviewed: Jan. 13, 2012
Very disappointed! I have made cream puffs before, but lost my recips, so I figured I woul dtry this one. I just made the custard and the puffs... the puffs came out more like fried pastry, and were not to my liking. I did make the custard, but its still chilling so I haven't tried it yet. I am hoping it is ok, but I'll be trying another recipe now for my puffs.

Vanilla Crepes

Reviewed: Jul. 22, 2011
Excellent recipe.... although for the millions times I have made this I always just used the whole egg out of sheer laziness. TOday I had egg yolks and used just them... And I would say just use the whole egg! I got more crepes out of it, and they are thinner and more like the original!

Deep Dish Brownies

Reviewed: May 10, 2011
Love this recipe!! This has been my go to brownie for years now!! If you;re looking for an gooey brownie, this is not it, but nice fudgey/cake consistency. I often double this and bake in a 9x13 pan for 40 min, or for party-perfect size I use a mini muffin tin and bake for about 18 min each, a double recipe made approx 5 dozen.

Scones

Great recipe!! Easy to make, and very versatile for different flavoring options! This time I made the cranberry orange version, adding about 1/3 cup half and half and 1/2 cup OJ. Next time I'll try blueberry or apple cinnamon! Thanks so much for the recipe and all the great recommendations!

Apple Strudel Muffins

Reviewed: Dec. 9, 2010
Made a few minor changes, as these were for the school information sessions (and a healthy request was made)! I cut the butter by 1/2 then added 1/4 cup applesauce. I also added 1 cup stone ground wheat flour and 1 cup white. Lastly, I added a little oats to the streusel topping for decor! THese were fabulous!! Not too sweet, just right!! I will say though, the recipe just barely made a dozen muffins. So if you want good size ones, I would increase your amounts! Thanks!!

My Amish Friend's Caramel Corn

Reviewed: Oct. 27, 2010
Very yummy!!!! I found this recipe very easy!!! I did make my own simple sugar syrup (sicne I didn't have corn syrup) and I used butter instead of margarine. I also used fresh stop popped pop corn, since I was going with the whole natural concept. Turned out great!!! And clean up was not that bad either!

Basic Cream Cheese Frosting

Reviewed: Oct. 15, 2010
Excellent!!! Needed a double batch for two cakes...and didn't have quite 8 cups of confection sugar (closer to 6)...came out smooth, creamy, and not too sweet!! Pairing this with a carrot cake and a pumpkin spice cake for fall birthdays!! Yumm!! Thanks

Spanish Rice Bake

Reviewed: Sep. 22, 2010
A great time saver is a big sautee pan, I have a 5qt caphalon sautee/sauce pan that's oven safe...this made it so easy, sautee the hamburg, add the onion & peppers, then tomatoes and the rest of the ingredients! The tip is to bring the mixture to a boil, then lower the heat to about a simmer, cover and cook for about 25 minutes. The KEY, don't uncover and stir! The steam gets trapped in and helps the rice cook! When the time is up, uncover stir, sprinkle with cheese, and toss the whole pan in the oven at 350 for about 10 minutes (just to melt all the cheese). Serve with the sour cream! Yummy!!! All three kids (5 & under) LOVED it!!! Thanks Melodie!!

Chewy Granola Bars

Reviewed: Sep. 15, 2010
Very good granola bar! I used 3cups old fashion oats, 2 cups rice krispies, and used whole wheat four. I also used Craisens, coconut, & chocolate chips! My Kids loved them!! Only reason it didn't get 5 stars is because they were very crumbly. But all in all tasted great, and would make for great granola for yogurt!

Strawberries and Cream Cake

Reviewed: May 17, 2010
What a great combo! I didn't have time to make the cake portion, so I used a boxed strawberry & white cake. Since people commented that it was too sweet, I used the cream cheese frosting as the filling with strawberries, used a light skim coat on the sides to fill any gaps, and used the whipped cream to frost the outside. Decorating the top with strawberries and shaved chocolate! What a hit!!! Thank You!!

Neat Sloppy Joes

Reviewed: Apr. 28, 2010
Fabulous!! I try not to use alot of premade processed things, for my kids sake! So I loved to make this from scratch! I used 4 cloves fresh garlic, onion, celery, and added some diced tomato that I had on hand. I didn't have tomato soup so I just subbed 1 cup tomato sauce and 1/4 cup water, the rest of the recipe I kept the same! Its great every time I make it, and is now a staple in our household! I have made this ahead of time and frozen batches of it, which defrosts and reheats so quickly! And I have a 3 & 5 year old and have not trouble getting them to eat it!! Thanks!!

Cowboy Oatmeal Cookies

Followed recipe exactly, except I didn't have butterscotch chip, so I sub'd peanut butter chips! Very nice! Thinner, but Soft with a slight crisp right out of the oven. Hoping they don't get crunchy after they cool!

Pizza Dough III

Reviewed: Jan. 22, 2010
Not impressed. I didn't read all the reviews before hand, and made this according to the recipe. It definitely came out far too sticky, having to add almost an additional cup of flour, and it could have risen a bit longer. Maybe I will try some of the suggestions and try it again sometime.

Finnish Pulla

Reviewed: Jan. 2, 2010
Very yummy, just a subtle sweetness. However, even only baking at 350 degree for 25 minutes, the bottoms burnt. So next time I would lower the temp to 325. I also divided the dough further so I ended up with six mini braids. This would have been perfect for holiday gifts.

French Toast Casserole

Reviewed: Jan. 2, 2010
Great recipe!! I was a little leary to add all the milk, as some said it was too eggy, so I only put about 1 1/4 cups. However, I think the whole amount would have been fine! Don't forget to grease the pan...I forgot this morning :( Other wise, I put it in a 9x13 pan, using day old french bread cut into 3/4 inch slices. Will certainly make this again and likely try egg nog next time!

Tomato Bisque III

Reviewed: Oct. 13, 2009
Great recipe!! I did make a few changes, due to ingredients I had in the pantry! I used petite diced tomatoes instead, and half & half. Also, I had just run out of nutmeg, so I added basil and italian seasoning for the spice. Served this with some grilled cheese, and it made for a wonderful lunch on a cold fall afternoon!

Super Short Ribs

Reviewed: Sep. 24, 2009
Great recipe!!!! I had some short ribs we had found on sale at the butcher in the summer, and froze them up. So I just defrosted those and followed the recipe to the tee (except I cut everything in half since I only had 2lbs of meat, and I sauteed the onions with the meat). The meat fell apart with the touch of a fork, and was fabulous with some of the sauce drizzled over the cut up meat! Even the 2&4 year olds loved it! Definitely a keeper!!
