Ground Beef Enchiladas

This was great! Whole family loved it, even with the jalapenos. I used 1 reg onion and sour cream instead of yogurt and a ton of cheese. Next time I'll add some red pepper to the meat as well.

Ground Beef Stroganoff

I made this with some if the changes previous reviewers suggested. I didn't use mayo because I don't like it warm, so I added 1/2 a can of mushroom soup. I didn't have beef broth so I used two packs of beef oxo and put 1/2 in with the noodle water. I also added garlic salt, Worcestershire sauce, and oregano. Everyone in the family loved it.

Baked Spaghetti

This was pretty good. I didn't have any ricotta or cottage cheese, so I used sour cream with garlic powder mixed in. I also didn't have ground beef, so i used Italian sausage. I took others advice and didn't bother with lining the pan with foil, but I did put some sauce on the bottom. I put the spaghetti (without the butter) next, sour cream, and finally the sauce with the sausage and some red peppers. It fed 3 adults (with seconds), 2 children and there's still leftovers :)

Zucchini Bites

These were amazing!! I didn't have the self rising flour so I made my own from Canadian Mama suggestion :) I didn't have large zucchinis so I used two small ones, 2 carrots, real bacon bits, 1/2 and 1/2 cream and bacon drippings instead of olive oil. I made them to go with soup for lunch and my 2 and 5 yr olds didn't even touch the soup, just the "muffins" ;) I also made them in the reg size muffin cups and it made a full dozen. There's only one left for my husband to try, and they came out of the oven an hour ago lol. I think I may try to double or triple the batch and freeze them for quick breakfasts or to go with soup.

So easy and sooo goood! I've made this to take to friends homes and it was a hit! We even had it for Christmas morning :) What? It has oatmeal and fruit!

Garlic Roasted Chicken and Potatoes

OMG! Can I rate this 20 stars? This was sooo good and soooo easy! I made it for friends of ours and they couldn't get over how yummy it was. I will definitely make it part of our regular menu!

Mad Dogs

These are great! I took the suggestion of wrapping the hot dog in crescent rolls, sooo good! My 4 year old and my husband loved them equally :) We used ketchup, deli mustard and sweet chili thai sauce as dipping sauces. Now we're thinking of trying this with italian sausages... so many options! thanks for sharing this!!

Cream of Cauliflower Soup II

This is really, really good. I took other ppl's suggestions and reserved some of the cauliflower for add back in and I also added some sharp cheddar cheese. My 16 month old even liked it!

Shepherd's Pie VI

Delish! My mom said it could be her last meal :) I did change some things to suit our taste. 1- sauteed shallots and garlic in some evoo. 2- added the ground beef into the shallot & garlic mix and cooked. 3- remove from heat and added frozen corn and peas after beef was cooked. 4- removed beef mix leaving liquid behind to make sauce using ketchup, beef broth & beef bisto for thickening 5- made instant mash, added butter, salt & pepper, as well as some pureed garlic in evoo. 6- put beef mix in first (when removed from liquid), then sauces over top, then potato mix with shredded cheddar cheese. It was to die for!! Made it again tonight to freeze :)

Fantastic Lemon Butter Fillet

This was AMAZING!!! So good! Even my 16 month old loved it. I kept back some of the butter sauce and added some sour cream to pour over the fish after... mmmm! I didn't put the lemon pepper on the fish, but instead put it directly into the butter so it wasn't as strong a flavour. Served it over jasmine rice and spinach with the sauce over top.

Rosemary Ranch Chicken Kabobs

This recipe is amazing!!! I don't make kabobs with them, instead using whole boneless, skinless breasts. I've also made this up all in a ziploc bag, put in the chicken then put in the freezer. It marinades as it thaws and I don't have a mess next time I want it!!!! I recommend it to everyone, especially those who love ranch :D
